      I've got a few verbal "tells", although I think living in the northwest for 5 years ironed out a lot of my accent...but when I get around CG's family in south Georgia, I instantly sound like I stepped out of a Faulkner novel

      Same here, Nancy. I found Chef Buck's channel years ago when looking for a recipe using canned mackerel. Once I heard him pronounce "onnyon" I subscribed and came back for more.

    The onion I buy is the onion on sale😂
    But your totally right about the best uses of each onion.
    When my son was a kid I would start dinner just about the time he'd be heading home and every meal began with either sauteed onions or caramelized onions. The moment he'd walk through the door he'd say
    Mom, what are we having for dinner, it smells so good!
    And at that moment it would just be some onions. My son loves onion.

      I think most meals I cook begin with slicing onions--and I grew up with the aroma of cooking onions as well...we had liver and onions often when I was a kid, and spaghetti...my mom always put a lot of onion in the sauce

    Great analogy of onions. Sometimes I slice a white onion and slap it in between two slices of bread with Duke’s mayonnaise to eat 🤷🏽‍♀️

    I love onions so much, sometimes I say "I think I could eat them on ice cream." never tried it though. I love purple onion, just a fresh slice with fried fish and pickled green tomato. Green onions sprinkled over bokchoy & noodles, Mexican food, soups, stews, gumbo. Sauted onion over steak, over baked potato or greens with hot tomato relish and cornbread of course. I agree all kinds of onions are great! Get yourselves some onions and start cooking!Enjoyed your video!

    Yellow onions are my daily driver onions. I like when Vidalias are in season and those 2 weeks when you can get Walla Wallas (great for burgers on the grill). I think I have bought white onions like 3 times in my life, and even then, they were out of yellows and the bulk ones were not the right size. A day without onions is like a day without sunshine.

    I would add spring/green onions are good when you want a more acidic tomato sauce as I sometimes crave.

    Thanks for the reaffirming on onions. Hey camera girl had some notable tips. Most of the time it’s yellow/sweet and white or red on occasion for certain recipes. Tell camera girl I like green onions too.😉👩‍🍳

      There are differences, but onions are ultimately pretty interchangeable, and versatile...they can all be cooked an eaten raw

    I use sweet onion for everything as they don’t make my eyes tear like yellow ones do. Never tried a white one. Maui sweet onions are my favorite but my market stopped carrying it. They are expensive and not many people besides me bought them according to the manager.

      I'd say yellow onions are the most tear inducing, but usually the best buy, so that's what I generally get--although sweet onions are sometimes a better price when they're on sale, and I'll purchase them then ...sweet onions do tend to be a little larger, which can be a good thing as well, since I do tend to use a lot of onion in my recipes

    Red onions don't tast milder to me. I've had some mild sweet onions. I agree with going cheap unless cheap is sprouting.

      there definitely are some mild, sweet onions...and those saucer shaped ones can be perfect for a burger...I love an onion that can be cut to exactly fill a big burger bun

    While I generally don't eat the white or yellow onion raw, they are great raw as topping on salted herring or as part of "patatje oorlog" ('war' fries; fries served with mayo and peanut sauce, topped with finely diced onions).

      I've never heard of war fries before--just googled it--sounds good to me...I've always been on board with the mayonnaise/fries thing....currently we're in new Orleans where chili cheese fries are a big thing...I've resisted so far

    Thank you, Chef Buck. I almost always buy the yellow onions. If the sweet onions are on sale, I sometimes will get that. My stomach can't tolerate raw white or red onions, so I rarely buy those. But honestly, the yellow serves well for pretty much all purposes. I use a ton of them, putting them in almost everything I make, raw or cooked. 😃

    Oh there are so many onions. The ones growing in the South taking advantage of the short but bright days. The ones growing in the North that will thrive in long summer days - they have quite different tastes and won't necessarily thrive in the same regions. So when growing your own it's prudent to use a variety that grows best in your region.

      I generally use yellow onion for soup because that's almost always the type onion I have in the house, but I use sweet onion as well for French onion soup, and I'm happy either way...I need to make a batch of French onion soup while the cool weather is around...I associate French Onion soup with "fancy", so it always feels like a treat to me, especially if I have a fancy bread with it, which I always do, since you have to have one with the other, right?

    This is such a great analysis Chef Buck, and it's worth sharing! Yellow seems the best but yes, depends on our purpose. I like how you differentiated between yellow and sweet. One of them being like flying saucers too! Red is definitely the best for burgers and salads. White is eaten raw too, and has a great produce especially in the Alibaug Western coastal area of India.     The kilo bags of yellow and red onions over here tend to be the same price fortunately, so we often have a bag of both hanging off the wall. Red onions are great pickled btw! The onions and the pickling liquid turn a lovely pink. The 3-yo BeardGrabber loves his pickled red onions, silver (baby) onions and gherkins.

      @@ChefBuckRecipes they do indeed look great in dishes! Well... that is as long as it's fresh. In any leftovers, cooked red onions turn pale and glazy, and not in a good way. Still taste fine, but just don't look appealing.

    Shallots are great roasted with squash and sweet potatoes, but I supplement with sweet onions for cost.
    In columbus, Ohio, our grocery stores don't sell yellow onions regularly (Heinens in Cleveland does), and definetly not individually. We do get Spanish onions which are more like yellow ones, and I prefer those for fajitas. Yellow onions are really good for homemade French onion dip and soup in combination with sweet onions.

      French onion soup is so good--I haven't made any yet this winter--gonna have to make a batch while the cool weather holds out. Really, I do like shallots--what's not to like?--but I'll only buy them once in a very blue moon 'cause I'm just too cheap...I know it doesn't add up to much when you're talking about the weight of an onion, but it's just hard for me to overcome my El Cheapo conditioning

    Sweet onions are my go-to for more or less everything. I just buy a big bag when they're on sale and i'm good til the next sale comes along. Red are really the only other kind that I buy, but I'll only get them for certain recipes so it's usually 1 or 2 singles in a bag. There are very few things I make that don't have onion in it. Kid me is cringing and gagging from the past!

      I do buy sweet onions when they're on sale because they'll sometimes be a better buy than the yellow onions when they are...it seems like sweet and yellow onions take turns being on sale, and the other onions seem to rarely be on sale

      OMG, John S, now you've done it. Just gave me a flashback to growing up in Brooklyn NY in the 50's, running around at some Italian Feast of Saint (insert name), listening to music, inhaling all the aromas, going on rides, stuffing my face with a sausage and pepper sandwich, then a greasy paper bagful of zeppole. Coming home with grease and powdered sugar all over me. Thanks for the memory.

    I use sweet onions for almost everything. Sometimes I use red onions. But I never use yellow or white. Yellow make me cry more than sweet.

    I don't know what he's talking about I always have white onions on hand and I've worked in some of the finest restaurants but we put slices of white onions on burgers, make it in salsa I use it in all my pasta sauces

      I've read that storing onions in the fridge will eliminate the crying when it comes time for chopping the onions...my fridge space is always at a premium though

    I thought Sweet Onions would be flatter (have more of ellipsoid shape) than the Yellow Onion, but in the video it wasn't the case. So what's the other difference with the Yellow Onion ?

    Buck, I've lived Walla Walla where the real sweet onion comes from. Yours is a reject because it's just too small. The good ones are three times that big and you really can just eat them because they are juicy and mild. So, where do these monsters go and why don't you see them in the store? They get shipped to Japan for a premium price. The flat one you showed is also a reject for export because of it's shape but size is acceptable even though a bit small. Another thing from that region you will never see is tree ripened water core apples grown mostly about ten miles south of the Washington border. Amazing juicy sweetness you can't buy in any store. These are the unpicked apples that are left on the trees. After fall rains the water soaks down into the apple. If you ask nice the owner often lets you take all you want. We got a huge bin for free and shared them to family. Also picked cherries for free.

      yeah, the sweet onions I find in the store are generally larger than the yellow onions...I'm used to seeing the sweet onions more saucer shaped. The saucer shape makes them less than ideal for exporting? It's amazing the variety of stuff that grows up in the Northwest...even in Seattle proper, we'd walk by fruit trees all the time.

    I love all onions, green included as CG says, but I'll only buy red onions when I'm in a gambling mood. I tend toward milder tasting onions for eating raw and you can get some nasty surprises, that'll ruin your sandwich almost, with red onions.🥵

    White Onions are pretty much mandatory in Mexican cuisine. Tastes better raw than any other onion if you want a bright crisp note in the food. Btw, white is the most popular Onion in Central and eastern Europe.

      Yeah, he doesn't make the vids regularly like he used to do back in the day, which is really a decade ago now...I think we made vids with Bill way back in 2012--He's a great guy--he has a lot of interests, so I guess videos have taken a back seat for him

    I was working on a ship once and a guy told me if they did not have any onions on a ship he would get off the ship. Yellows are the best, they last a long time. when I add onions to my bread dough the dough does not rise. hey Buck, I got an apartment grown sunflower shoot slow-cooked casserole video coming up soon.

      pretty soon you'll never ever have to leave your apartment :^) didn't ships used to carry onions to combat scurvy? Yellow onions last sooooo long, and even if they start to sprout, they're still just fine...hard to beat onions for value, that's for sure

    I get the red ones cause I do like salads with raw onions and they cook nicely too. Shallots I swear all these cooking channels are probably paid to promote them..they are way too expensive for no tangible reason.

      shallots are often 4X higher in price than yellow onions...shallots are tasty, but 4X tastier than yellow onion?....nope...all onions are delicious, but a better price tastes extra nice to me

    I absolutely love onions. I can eat them raw, I love them that much. Now granted, my love for onions has somewhat affected my love life, but still,,,,onions!!!

    Every onion has its own purpose. Home grown onions are the best. The only thing wrong that people do with home grown vegetables is put them in the refrigerator, putting veggies in the fridge kills the taste and this also goes for home grown fruits. So, please do not put these foods in fridge. Onions are very good for you, they are medicinal.

      one of my favorite breakfast dishes is lox and bagel with lots of capers and raw onion...it's one of those love it of hate it breakfasts, for sure

    I am, right now finely chopping up a Vidalia and Red onion to stuff my 12 Oysters. Onion, garlic, Tabasco sweet and spicy, Tabasco Smoked Chipotle, butter, olive oil, white pepper. Finely chopped bacon,and spinach. 1--2 minutes before pulling off grill, add chopped green parts of a Scallion (green onion)
    You CANNOT beat this oyster.
    Rockefeller is soooooo good but
    Alot more fat and cholesterol.
    Thank you God for giving the world
    Oysters. Not for the Aphrodisiac effect effect because that is Bologna. They are just so good.

      often the yellow onions I buy are .99 cents a pound...the sweet onions usually run between 1.30 and 1.50 a pound most places I shop
