This is originally a Turkish food and Turks don't use cumin in this dish. You can use what spice you like, generally Arabs use cumin in theirs.

You can see the amount of the whole thing at 3:30 and that two people are making it so I'm confused by this comment. It's obvious it's not made for just 2-4 people, naturally the amount of butter and oil would increase too.
