I've checked it and the gasket is still in excellent condition. I'm 71yrs old and because of you and your videos I believe I can do this. I think I'll do the dry beans first, then the potatoes. I have to tell all of you, I'm 61 and bought a pressure canner in May. I started canning in June. I now have close to 300 jars of food on my shelf and gave jars of food as Christmas presents. I could not believe how easy it is. Do not be afraid. And I started with beans as well.
We canned 150 pounds of potatoes this year. When we make soup, stew or just fried potatoes, we don't drain them before adding to the pots. If you're frying them, the water boils off and the potato starch makes little crunchy bits, it also helps to thicken a soup or stew. Happy Birthday!
I think we all wait patiently for your next video. I really don’t know how you do it with working full time and all the chores you have after work. I have no idea how long it takes or how you edit and upload a video but I am sure it is very time consuming. I want to thank you so much for all your work to give us all some relaxing time with a cup of herb tea. Watching two down to earth people from Arkansas and living a happy life without all that fancy stuff that has never made anyone truly happy. 😃

I agree…but I’d add just about everything I pressure canned has held up. It’s been a blessing to me. The canned potatoes are wonderful and I’ve mixed them up on my shelf with carrots or onions or both. She’s taught me so much. God Bless you..😊
If you follow quality, rigorously tested recipes, they give a little extra security. The first time I pressure canned, I was hiding behind a dresser with goggles on. I still look at the thing side-eye every time I use it, but if I can do it, so can you! @@christineking4016

My mama used to can anything she could get her hands on! We never lived in a house with a big yard, but she always had a garden! She bought vegetables from people selling them and even picked most of what she bought! I miss her so much! 😊

We are using our canned potatoes and roasting them with canned carrots and onions with Italian seasoning. Yum! 😋
