    I've been wanting a carbon steel pan for a while, but I despise the typical shape that they are made in, with extremely shallow, sloped sides. These Darto pans are what I've been looking for. Nearly vertical walls, with a huge amount of cooking surface. Also in terms of seasoning, I like using either lard or ghee.

    When I unboxed mine I heard all the clinking around and was thinking oh my did something break, but it was just the little key chain! haha.
    Def a great pan, do you find it a bit too heavy vs other carbon steel pans?
    I seasoned mine in the oven!

    The shipping residue is linseed oil, according to the Darto website.
    I seasoned mine in the oven with a beeswax/grapeseed/soybean oil paste but I didn't blue it first. I've blued woks but was afraid that kind of heat would warp a flat pan. Did you experience any warping?

      It is amazing how may videos of people blueing their pan and then having to hammer it back flat.

    Carbon steel rusts and needs an oil rubdown after washing. I dont see any other gotchas besides that. That sticky wax on the pan straight out of the box is likely to be dried vegetable oil. I like carbon steel on knives. Haven't used it on cookware before. I'm guessing that it needs less TLC than cast iron.

    as someone who doesn't cook much and doesn't know much about kitchenware can I ask earnestly what value this pan provides compared to a cheaper pan or in comparison to a stainless steel pan

    The question is how hot the handle becomes during cooking.

      It gets pretty hot if the cooking time is longer.

    Congrats! Carbon steel pans are typically shipped when new coated with Bees Wax, this to prevent moisture getting onto the carbon steel which can cause it to rust. Also, after use finish drying on the fire / oven to remove any water. Never use soap once it has been used. If you do, then you should follow the seasoning procedure again.

      You can alway wash your cast iron or carbon steel with soap as soap no longer includes lye it does not damage the seasoning. Wash your pan, dont be gross.
