    My lazy cinnamon syrup was to just add a tablespoon of ground cinnamon while the syrup simmered.

      Im about to say the same, i do all the thing with powder, but something like fresh leaves is a very bad option to replace by powder 😂.
      I tried shiso leaf powder and its taste so different, also the color is brown 😢

      bad idea, cinnamon flavor/oil evaporates at low temps, you lose tons of flavor. this guy's video is the correct method, not yours.

    My lazy one is just chucking a few cinnamon sticks into still warm rich syrup, let it cool, then keep in the fridge. Easy & simple.

    Tried this method after your fernet video. I used honey syrup because I’m only allowed monosaccharides. The method works great. Nice strong cinnamon flavor.

      Honestly, my favorite Old Fashioned uses rye whiskey and cinnamon demarara syrup. Your choice of bitters (I prefer black walnut or aromatic bitters), and garnish with an orange peel.
      Tons of tiki cocktails.call for cinnamon in some quantity, like the aforementioned Don's Mix which is a component in the Zombie.

    Maybe a stupid question Leandro, but when making this syrup, could I just put the sugar and water into the Nutribullet along with the cinnamon and basically just blitz it all together? just wondering . Also a couple potential future video ideas is to do a base spirts style video with Ca'chcha (Brasil's national alcohol) being the the base. I'd personally love to see what else this incredible spirt can go into. Another on would be to have Marius make up a drink of his own creation, you trying and then trying to recreate it. I think Marius would make a great drink anyways, but seeing you try something completely new and try to adjust the flavors would be awesome. Plus we love to see Marius on screen again. Cheers

    Isn't cassia bad for their coumarin amount? Or it just matters in alcohol infusions?

      cassia definitely has higher levels of coumarin but is it dangerous? Probably not. Ceylon Cinnamon does have the least level of coumarin out of all types of cinnamon.

    As it's so intense, why not make it with rich simple? When I make ginger syrup with fresh juice I do this as it's so intense you don't need a lot.

      30 minutes of infusion beats 24 hours of infusion as most cinnamon syrups require. But by all means call me out

      Just take your basic simple syrup recipe and sub water for almond milk then add a couple drops of orange blossom water, almond extract, rose water and a bit of cognac once it's done. Super easy, takes no longer than a normal simple syrup. I just made one last weekend in like 10 minutes. I can't take credit for this though - I got it from Anders Erickson. If you want exact measurements here is what I do for a small batch: 1 cup almond milk, 1.5 cups sugar, heat to combine then add 1/4tsp almond extract, 1/4tsp rose water, 1/2tsp orange blossom water and 0.5oz cognac, stir together and bottle.

    It's nice but do not blend it.Because the cinnamon stick is not etible.Just the inside is the cinnamon powder you don't need to grind Or blend it, you need to put it in hot water .And after that with a scoop to scoop it up.Just the inside nothing else, not all the stick in etible
