  • In this video, I'll guide you through the step-by-step process of making a classic Tartine-style country bread.
    Ingredients:
    450 g white all purpose flour 11.7% protein
    50 g whole wheat flour
    350 g water + 25 g water for salt at room temperature
    10 g salt
    100 g wheat 100% sourdough starter at peak
    Bake:
    1 - preheat the dutch oven together with the oven to 260C (500F)
    2 - lower the temperature immediately, before putting the bread inside, to 230 C (450 F),
    put the bread in the hot dutch oven and bake covered with the lid for 20 minutes,
    then remove the lid and bake the bread until the desired color
    about another 20 minutes
