Si in plus, lasi banetonul descoperit in frigider! Care e explicatia? Chiar sunt inutile manevrele de care am pomenit?12:52

You delivered the directions clearly, articulately, and in a timely manner. All amounts were clearly presented and your filming was perfect. This video is absolutely the best way to make sourdough bread. I have studied just about every sourdough recipe on line and although many are satisfactory, none compare to the simplicity that yours does. Most recipes want you to go through so many ridiculous steps. Many want you to waste time with autolysing and various other things that make sourdough a chore rather than an enjoyable experience. Thank you Grant for this video and keeping it simple.

Things I love about this method:
    no wasting/discarding of starter
No autolyse (I can never mix the salt through evenly)
Lovely hydration level combined with the right amount of messing about with it during bulk fermentation, meaning end loaf is light in structure but still able to hold melted cheese/honey (for example)! The huge holes of higher hydrations just render the bread practically useless for us!
Thank you, Grant - I look forward to switching to this method ...

I had a ROUGH weekend with sourdough. I made my starter 10 days ago, it seems strong, it doubles in a few hours and had beautiful bubbles and smells amazing. The first day I think it was too cold in my house and the recipe I was following never allowed the first rise so nothing ever really happened. The second day, I thought because it was so cold we would warm up the house so it was about 82 but the dough after 9 hours or so was almost liquid. I am desperate to make sourdough, so your recipe and detailed instructions are going to be my next try. I thought I could start the first rise tonight and let it work overnight but now that I am reading your instructions, that isn't going to happen. So I will feed my started good tonight and begin super early tomorrow morning. I am praying this recipe is as easy as you show.

I grew my own starter beginning in May 2021. I've been experimenting with sourdough bread ever since. I've been baking for decades, but never sourdough. This was the biggest baking challenge I've had since I began baking as a young woman in the 1960's ... LOL.
I got good at making a sourdough bread in a loaf pan following a recipe/method with a gal I found here on RUclips. I wanted to make one in a cast iron pot, where it goes into a basket and overnight in the fridge. Hubby wanted one with a chewy texture. I wasn't having much success with my first 2 round loaves. I over proofed the first one and it was not edible. The second one was edible, but was still dense / heavy and a little doughy. We ate it toasted good and brown, but it did have a good flavor. Then I found this video with Grant Bakes. Today I was successful!! Baked my loaf this morning and had it with dinner. Beautiful spring and delicious!! A big "Thank You" to Grant Bakes!!! YEAH!

I figured nothing ventured, nothing gained. The first loaf was a stunning success! Then, the proof is in the second trial: does it repeat? YES! I probably did not work it quite the same for development of the skin; but success breeds confidence! This recipe/system really works. THANKS!!

Just baked my first sourdough boule ever following these instructions, and it came out looking beautiful and tasting delicious, even without using a banneton or lame. Love the comforting vibe: "...keep going until you're satisfied or tired of stretching and folding."

Love how you’ve presented and explained this, a great tutorial and help.
One question, I’ve gone through the process but my dough at the shaping stage is VERY sticky to touch let alone shape.
    Suggestions/ideas/comment welcome!

    • @GrantBakes
      @GrantBakes  3 года назад +7

Thanks! I'm glad you find the tutorial helpful. It's going to be somewhat of a sticky dough no matter what, but if you're dough is looking very different than mine at shaping time, then you could try giving the dough more sets of stretch and folds during the bulk fermentation period. I recommend 3 sets, but you could try 5 sets. It will help build more gluten development in the dough and should be easier to shape.
Also having flour on the table really helps me when I'm working with stickier doughs.
But if you're finding it's still too sticky, consider lowering the water in the recipe. Maybe 275 grams instead of 300. This will lower the hydration of the dough and make it easier to handle. It will still be great 👍🏻

I did a no knead bread, left it 24 hours for bill fermentation. It was nice bread but just a bit dense. I’ve followed other guides and they were seriously relentless on the steps and needed so much attention - with the same results. This method, I’ve just got the best load ever. Lots of spring, and most importantly the actual taste and texture of the bread was twice as good as ever before. This isn’t my first loaf haha! The guide on shaping was so easy to follow, and while I thought I’d burnt this it was not, just a serious crisp crust which was not chewy. Recipe is saved for ever!!

This will be my second loaf to try, but I will do a longer cold fermentation. I just made one from Culinary Exploration that had higher hydration, the dough was very soft and sticky. It was a little hard to work with. I'm an old baker, but haven't done a lot of sourdough, so decided it was time to start again. I was able to manage it okay, but want to try one with lower hydration It's on its final 15 minutes. The spring wasn't too bad.
I can't wait to try your recipe. I really appreciate how you give all of the detail you need for the process, without adding much more to it.

I do not know where I went wrong . Firstly not enough water so not enough for mixing so added more then each stretch and fold was a nightmare could hardly lift dough it was that stiff. I persevered and finally no improvement after all stretch and folds so put in container with lid and just left it alone. It did rise but not a lot so finally put it on worktop to shape, did the best I could and then placed in fridge overnight. It felt soooo stiff and heavy but did not give up. It looked the same as when I took it out of fridge as when I put in in. What the heck I thought I have to cook it. It was good texture for scoring the best Scoring I have ever done. So in the oven it went, Viola!!! It was fab, My goodness could not believe the outcome it was a great shape and rose lovely and texture was just perfect. What can I say it just goes to show never give up. The taste and texture was perfect.
