  • Hey Y’all! HAPPY NEW YEAR! This really simple recipe for Hoppin John's + greens is one is delicious and easy. If you have never had hoppin’ John’s I hope you try this out!

    To reduce the arsenic levels, I have started cooking my rice like pasta.

    Pan Seared Mushrooms
    3 tsps of coconut aminos or soy sauce
    1/4 to 1/2 cup of low sodium veggie broth
    1-8 oz package of mushrooms, sliced ( I used white mushrooms)
    In a very hot non-stick skillet, add the veggie broth and coconut aminos/soy sauce. Lay the sliced mushrooms flat and allow them to cook and soak up all the liquid. I usually turn the eye back down to a low-medium heat while they are absorbing the liquid.
    Hoppin John
    2 carrots, diced
    2 cloves of garlic, diced
    4 stalks of celery, diced
    1/2 a white onion, diced
    low sodium veggie broth
    1 frozen bag of peas ( I used purple hull, the classic choice is black eyed peas)
    1 can of diced tomatoes
    2 tsps tomato powder, (optional)
    1 tsp of smoked paprika
    black pepper to taste
    cayenne to taste
    1 tsp of chili powder
    Move the mushrooms over to the side, and in the same pan add in some more veggie broth. This will be to saute the other veggies. Add all the veggies above, and saute in with the mushrooms until they become tender.
    Once the veggies are tender, you can transfer to a pot if you like to cook the peas.
    Add in 2 cups of veggie broth, the can of tomatoes, the peas, and spices.
    Allow to cook for 45 minutes or until the peas are tender and cooked through.
    Serve over rice. I like to add pickled jalapenos and the pepper sauce from the pickled peppers. I also like to serve with pepper jelly. Use what condiments you like and make it your own! I hope you enjoy this recipe.
    Sauteed Greens
    Simply use the greens you would like, but here is the recipe I used for ours.
    Green Cabbage, sliced thin
    1 Turnip, shaved and sliced thin
    Japanese purple mustard greens
    giant southern mustard greens
    variety of kale
    Alabama blue collard greens
    All greens were washed and cut up into little bite sized pieces.
    Dry saute the cabbage and turnips until they begin to brown. Once they are browned, add the other greens in to wilt. I also add a very generous amount of Trader Joe's 21 seasoning salute seasoning. You can make this your own though and season it however you like!

    Absolutely amazing! I grew up on southern cooking and I love how your recipes have so much flavor but are still healthy. Never thought to put cabbage and turnips in my greens and I can’t wait to make a pot of purple hull peas seasoned like yours. Thanks for all your creativity and I applaud your success in regaining your health!

      Thanks you so much! Southerners love seasoning lol 😆 but seriously, I find with most southern dishes I miss, it’s really the seasoning that left the impression. So I just try to go with it and it usually comes out good. I really like the turnip in the greens like that it gives it a lil something, something 😆thanks so much for watching! Happy New Year!

    I got rid of my mandolin after one use. I knew it would be a dangerous tool for my quick moving hands. I’m not a slow patient person in the kitchen 🤣🤣 I love your channel. Starting the starch solution myself so I appreciate all your tips and recipes!

      Lol come on over to Texas 💚 my dad taught me a lot growing up. He grew up on a farm and has had a garden or something growing all my life. The other part I learned just by doing and reading! It has been fun. I love permaculture principles and try to incorporate that into the garden! 💚🌱

    Thanks for the good ideas as usual. The recipe looks good except your ‘little bit of jalapeños” 😂. I am from the the south but have never been able to eat hit. I am jealous of your garden. Have a healthy 2021!

    Love it! Can you please share how you boil rice like pasta? How long do you boil it for before it’s ready? I am all about cutting back on arsenic if there is a way. I am just trying the wfpb eating and could use any of these types of tips. 😊

      Yes. I just add way more water than the rice would need. I cooked the brown rice for 30 mins on a good steady boil. Then take it off the eye and strain it like pasta and rinse it off. It came out great! It may be easier in my opinion to cook it like this!

      Thank you! The hoppin John’s is just the way they are cooked the spices and tomatoes etc and served over rice 😀 it’s just a traditional southern style dish. You should definitely try them out they are really tasty! 💚🌱

    Happy new year to you. I just subscribed . Your greens made me drool!! In your response to my last comment about your garden you expressed an interest in off grid living. We live off grid and when High Carb Hannah and her husband Derek moved here from Minnesota I reached out to them and they came to our house to check it out. They now live about 40 miles from us.       Wow that’s incredible! I have seen the episode before, but I’m going to go back and watch it again. It really is my dream life. One from old age and the other from valley fever. We now have a different lady lab who has been with us 2.5yrs. ,Abigal.       A very illusive and hard to find one. Ugh! I wish I had a link but I don’t. TJ Maxx and home foods sell the brand. It’s called palm restaurant. If you come across the frying pans buy them all. They are super rare apparently 😐

    This is NOT Hoppin John rice at all! This is NOT the way you make true traditional Hoppin John. I'm not sure why you're calling it as such when it's NOT! This is misleading because anyone who knows what true traditional Hoppin John rice is and how it's made this is not even close to what it is at allll!

      The name Hoppin John rice is the roots of Southern African American/blacks! There is meaning and history to Hoppin John rice and it more to it then just seasons and spices as you've said in a post below.

      I never said it was authentic. I don’t generally go into the history of any dish I make. All food came from somewhere. Just trying to share a little joy in 2021.
      These are seasonings we like in ours and no recipe is ever the identical. It’s also a maximum weight loss version and I think that is what makes life beautiful.
      If everything was always exactly the same, then life would be dull. Please make it any way you see fit. I hope you have a happy and wonderful new year.
