Sup mike, I've made since saw on site, the jalapeno bribe makes a difference, we use Velveeta, everyone loves it, now it's double batches, even another batch with the pickled jalapenos, even added Rotel, it's also great on tacos, tostada's, burrito, basically anything, keep rest in a jar, even heat in mic for meatloaf.. used to use cheddar, but Velveeta nailed it, adding the bribe is genius, even spread cooled on bread for fast grilled cheese lol. Hiya. It’s nice to see your making this with a roux. If you get the chance try this with a Canadian cheddar. It’s a really bold sharp cheddar that lends itself to sauces well. Also sub the milk for a dark beer such as a good German variety. American beer won’t work-I tried that when I lived in the States, it was not good. If not using Jalapeños try adding English Mustard for extra heat. This goes well with chips or over cauliflower or salmon. From Chesterfield.
Dark beer makes it a fondue, that’s not a bad thing but it’s just different from cheese sauce. Beer and wine don’t have the same emulsification qualities.

Thanks! This definitely firms up a bit when it cools, so it's really best to keep it warm if possible. I like to keep it in a small crockpot. You can try to add extra liquid to make it very thin for squeeze bottles, though not sure how well that would work out. You might try a simple water bath to warm the bottles, or even a gentle nuke. =)

There are many great things regarding processed cheese, one being your demonstration here. Over the last 3 years, I've purchased the zesty cheese sauce over the internet and enjoyed some yummy nachos. I added the standard small can of chilis, great stuff. We used to get large cans of cheese delivered to the theater, like liquid cheddar. A lot like Rico's, I suppose, which you can just buy. You might experiment with different cheeses, though, if interested.
Sonu, it's best served fresh, but you can store leftovers in the refrigerator. When you want to warm it up again, you can heat it in a pot on the stove, then swirl in a bit of milk or cream to get it nice and creamy again. I hope this helps.

I tried to add too much ingredients one time when i was first starting out age 8😂 less is better nowadays and I tried your recipe and as usual homemade always blows canned ready-made outta the water and I can't go back, i just had sharp cheddar and turned out. Very similar to our recipe. We add a few cloves of garlic with the flour, substitute nutritional yeast for cheese, and add a little maple syrup with hot sauce.

American cheese the ingredient that helps to get melty cheese is sodium citrate. So if u swap out for another cheese and added a pinch of the sodium citrate u could get similar melty cheese. Modernist cuisine book goes into other culinary techniques

For a vegan version make a cashew milk (best if home made) use a vegan butter substitute and for the cheese flavor use Bragg’s Nutritional Yeast abs Seasoning. I use this combo for vegan Mac and cheese.

Sounds crazy but try a microwave sometime. I make cheese sauce like this. In a bowl add a pinch of cornstarch - like 1/4 tsp. Add a Tbsp butter. Heat in microwave 1 minute. Stir. Add about a quarter cup of milk. Heat again for 2 minutes. Open and stir when the milk gets close to boiling over. Close and repeat. Then add about a half cup of cheese (I use Mexican shredded), a quarter tsp lemon juice, pinch of xanthum gum if you have it, and stir until smooth. That's it. Perfect creamy cheese sauce in the microwave. PS. This method works great for southern gravy. Easiest method, and hard to burn. ❤

Next time you can cook the roux down more to be sure to cook out the flour taste. You can also try cornstarch or arrow root instead of flour.

I’ve found that the processed cheeses stay liquid longer than other cheeses, does the brine help keep it liquidy longer?
It does help, making it a bit looser, though it can still harden up a bit after time. Easily fixed with a bit of liquid swirled in over heat.

Use medium heat for the roux, then reduce to low heat for melting the cheese. I'm sure you can make this after caramelizing onions. Enjoy!
I might this one, everytime I made cheese sauce whether it's for Nachos or Mac n cheese, the sauce still taste silty and I used fresh grated cheese?

I can not imagine nacho cheese being from a real cheese.. processed or go home.

Hmm, I've never had that issue. So strange.
Cook the roux until it smells like pie crust. That taste is the raw flour taste, it has to be cooked off.
