THINGS YOU’LL NEED:
2 tablespoons butter
2 tablespoons flour
1 cup milk - use whole milk for a richer flavor
8 ounces melty cheese - processed American cheese melts best for nacho cheese, but cheddar is great for flavor - you can easily add more cheese for cheesier nacho cheese
2-3 tablespoons pickled jalapeno juice
Pinch of salt, optional if desired

What extra toppings do you like to put on your nachos?
Sour cream, bacon, salsa, jalepenos, bbq, sausage, avocado. Just really depends on what I feel like. How do you not have a mil plus subscribers? Just found this channel and love it.
I got this from grandkids and works, blueberries lol
Pickled jalapeno, tomato, onion, olive. A hit of cilantro.
Movie theaters today secret ingredient is water. Not like it use to be 🧀Oh and tiny plastic sealed cups
I do the jalapeno juice on a lot of things. So much flavor and the acid from the vinegar adds to it as well.
Nacho regular cook 😂 but awesome simple recipe strait to the point and no headache music .l😅
Glad you liked it!
Where has this channel been all my life can’t stop watching his videos I can’t wait to try them out . They all look so delicious!!!!
Thanks, Eric! I hope you find many recipes you enjoy!
Really like this, i have been making pickled jalapenos for a year now and was just micro waving cheese on the nachos, occasionally i would buy Tostito's nacho cheese dip and was just thinking on how to make my own, then saw this, awesome thanks
Great timing!
Excellent, subbed!
Eso se ve exquisito 🤤
I made this yesterday and it was awesome. Thanks for sharing this great recipe
You are welcome, Adrian - glad you liked it!!
Hey Im going to try your cheese sauce on my steak and chicken fajitas nachos tonight can’t wait to try it looks delicious & cheesy!!!
Yes!! I love this! I will be right over, haha. =)
I halved your recipe for dinner (2 adults & 2 kids) I used a 4oz velveeta pouch instead of the block & it came out very good ❤ I used the brine of banana peppers and it made the sauce. It needed that kick. Thank you!
You are very welcome, Sarah - enjoy!
Nice, Love Nacho Cheese for Nachos. Ill try this tommorow
Enjoy!
The real secret is the Kraft processed cheese in the foil label with blue printing that’s not velveeta but people mistake for it,
This is the best recipe I’ve tried and it came out perfect
Great to hear! Thanks for sharing this!
That looks great
Thanks!
Spot on
Enjoy!
Sup mike, I've made since saw on site, the jalapeno bribe makes a difference, we use Velveeta, everyone loves it, now it's double batches, even another batch with the pickled jalapenos, even added Rotel, it's also great on tacos, tostada's, burrito, basically anything, keep rest in a jar, even heat in mic for meatloaf.. used to use cheddar, but Velveeta nailed it, adding the bribe is genius, even spread cooled on bread for fast grilled cheese lol. Tyvm🌶️
Glad you like it!
Your videos are the bomb!
Thanks!
I'm glad I found this channel, I'm a new sub👍
Welcome aboard!
Love this dude. Nice hair. Good voice....Great cook. Keep it up!
Hey, thanks so much. I appreciate it. =)
Definitely gonna do this! Also, i used to work the concessions stand at a theater. I remember the first day of Star Wars Phantom Menace and the line went around the block. It was almost anarchy. Lol
Haha, seriously! I remember some pretty crazy days behind that counter. So many stories.
Gonna use Cheddar and Gouda tonight since we dont have American cheese here. Thx for the receipe❤
Hope you enjoy - let me know how it goes!
Hiya. It’s nice to see your making this with a roux. If you get the chance try this with a Canadian cheddar. It’s a really bold sharp cheddar that lends itself to sauces well. Also sub the milk for a dark beer such as a good German variety. American beer won’t work-I tried that when I lived in the States, it was not good. If not using Jalapeños try adding English Mustard for extra heat. This goes well with chips or over cauliflower or salmon. From Chesterfield.
Thanks for the ideas!
Dark beer makes it a fondue, that’s not a bad thing but it’s just different from cheese sauce. Beer and wine don’t have the same emulsification qualities.
I do enjoy a nice beer cheese.
Thank you, Sir!
You bet!
Hey there, just discovered you channel, great content! 👍🏻👍🏻 Any tips to prevent the sauce from firming up, especially when filled in a squeeze bottle? keep it up man!
Thanks! This definitely firms up a bit when it cools, so it's really best to keep it warm if possible. I like to keep it in a small crockpot. You can try to add extra liquid to make it very thin for squeeze bottles, though not sure how well that would work out. You might try a simple water bath to warm the bottles, or even a gentle nuke. =)
Wow that looks amazing , but sadly there seems to be no commercial processed cheese available in uk if anyone knows of a source please let me know ?!
A door dash restaurant near me pits nacho cheese on their fries.
I REALLY don't want to spend the cash just for those delicious fries.
I got cheese, milk, jalapenos and frozen fries...just needed the recipe.
Thanks
Welcome - enjoy the recipe!
Just made this for chili cheese dogs… soooooo good 👍
Perfect use!! Seriously.
Nice!
Thanks!
Wow this stuff is fantastic and easy. Taste so much like Taco Bell.
Oh my goodness 🤤🤤🤤🤤
Oh yeah. Great for super bowl football night. Thanks
Totally!!
There are many great things regarding processed cheese, one being your demonstration here. Over the last 3 years, I've purchased the zesty cheese sauce over the internet and enjoyed some yummy nachos. I added the standard small can of chilis, great stuff. Processed cheese is #1 for me on a cheeseburger, a diner omelet, grilled cheese, etc, the list goes on. 😋
This video popped up today, I know I need to catch up.
Cheers to keeping it spicy and delicious. ✌️❤️👍🌻
Thanks! I appreciate it.
1 large beaten egg and an american cheese slice right in the middle of it, egg folded over to seal the cheese in makes for an amazing egg and cheese sandwich, some diced jalapenos would make it even better
Just made a jar of your pickled jalapenos last week again, I love them. I'll try this recipe next time I have some tortilla chips on hand.
Enjoy!! Extra jalapenos for me, please! =)
I made his 2 days ago🤩
I tried to add too much ingredients one time when i was first starting out age 8😂 less is better nowadays and I tried your recipe and as usual homemade always blows canned ready-made outta the water and I can't go back, i just had sharp cheddar and turned out. I usually use processed American so i might try that another time. Great post and CHEERS! HAPPY HOLIDAYS, MAY GOD BLESS YOU AND YOUR FAMILY!
Thank you for sharing and happy holidays to you, too!
I kinda quadrupled the recipe😅but Ooooooh my my my! I’ll never buy from the store again! Indeed need some jalapeño “juice” for the “nacho flavor kick. All in all, bar none the best simplest recipe and great taste! Also a good base for that “soul food” holiday Mac n cheese! Love you for this thanks! I used Colby Jack and sharp cheddar😲! So nice!
Boom!! I love it! Glad to help. 😁😁
Dude, I’ve been ttrying to figure out for a long time what it is that they put that gives it a slight spice. Thank you
Awesome!!
Have a question, could I use Velveeta cheese? I 🫶 this recipe and can’t wait to make it. This should be a teaching video for others who want to start the perfect RUclips channel. Thank you 🙌😃👏⭐💯
Thanks, Jenn! Yes, Velveeta is great for this! Enjoy!
@@ChiliPepperMadness That's what it looks like you used. I think I'll try sliced cheese, since Velveeta's so expensive and I'll be making a small batch just for myself. Thanks for the recipe!
Chef, I made it today and it came out great. Just 1 question, Once it cools down the sauce become too thick. How can we keep it's liquidity?
Glad you enjoyed it. It's best to keep it warm while serving so it stays loose. I serve it in a show cooker.
@@ChiliPepperMadness Normally, I was thinking to make a cheesy dip like we get with Garlic Bread from Dominos Pizza. It never gets thick.
Awesome video! How to prevent flour and butter from clumping together?
Lots of stirring. Keep stirring.
Will try that. Thank you!
I love corny, cheesy jokes. So of course “It’s na-cho cheese” got me LOL. 🤣🤣🤣🤣
Haha, I'm loaded with Dad jokes. Poor Patty.
I’ve found that the processed cheeses stay liquid longer than other cheeses, does the brine help keep it liquidy longer?
It does help, making it a bit looser, though it can still harden up a bit after time. Easily fixed with a bit of liquid swirled in over heat.
Can this sauce be stored for later or would it get a weird texture & taste?
Sonu, it's best served fresh, but you can store leftovers in the refrigerator. When you want to warm it up again, you can heat it in a pot on the stove, then swirl in a bit of milk or cream to get it nice and creamy again. I hope this helps.
I might this one, everytime I made cheese sauce whether it's for Nachos or Mac n cheese, the sauce still taste silty and I used fresh grated cheese?
Thanks, Mark. It could be salty from the source of the cheese itself, or if you're adding a seasoning blend that includes salt.
@@ChiliPepperMadness I meant s i l t y not salty.
Thank you, for both responses 👍
Very similar to our recipe. We add a few cloves of garlic with the flour, substitute nutritional yeast for cheese, and add a little maple syrup with hot sauce.
Sounds great!
That sounds amazing!!!
So would you still have a movie theater quality sauce if you used the can cheese and added jalapeno juice? I bet this is better, but I'm lazy ☺️
Haha, yeah, go for it. =)
The movie theater nachos dont have meat usually but there still Soo good
They are, right? I miss those fun days working at the movie theater. At least I have the nacho cheese! Haha.
Hi, can we replace the flour to cornstarch ?
Absolutely.
Looks awesome, Mike! I’m vegan so my brain cells are spinning trying to decide how best to make a vegan version of this. Thanks for the roux and jalapeño juice tips!
Sub coconut milk and butternut squash for the cheese and nutritional yeast for flavor
Thanks!!
Velveeta is free range cheese if that counts.
For a vegan version make a cashew milk (best if home made) use a vegan butter substitute and for the cheese flavor use Bragg’s Nutritional Yeast abs Seasoning. I use this combo for vegan Mac and cheese.
@@f0rmaggi0 cheese needs to be the entire food pyramid, lol.
I can't mask the taste of the flour. I've followed the exact receipt but in the end my sauce takes more like flour paste than cheese dip. And suggestions? Thanks
Next time you can cook the roux down more to be sure to cook out the flour taste. You can also try cornstarch or arrow root instead of flour.
@@ChiliPepperMadness Ah, I didn't know that. I may not have cooked the flour mixture down enough. Thanks
I knew it was going to jalapeño juice
What kind of flour do you use?
All purpose.
@@ChiliPepperMadness thank you!
What happens if I use cornstarch instead of flour?
That should work for you well enough.
Add some cooked macaroni for mac and cheese.
What about using bacon grease? Instead of butter.
You can do that, Mark. Bacon grease or other fats are often used to make a good roux.
Jalepeni juice didn't hear.
"3 tablespoons of jalapeño juice"
Dumps half the jar.
You can always adjust to your liking. I did! ;-)
So funny. Velveeta in the microwave with milkm
I’m upset. I tried to cook this 3 times and it doesn’t taste right. Looks watery but textured. I mixed the roux properly. I’m disappointed 😔
Argh! I wish I could help you! I don't know what's going wrong! Maybe more heat?
I did and I feel like it made it more crumbly. 😢 but no matter what I did, I just couldn’t get it creamy😭
Lauren, next time lower the heat and use a bit more oil. Sounds like it was just too dry.
Sounds crazy but try a microwave sometime. I make cheese sauce like this. In a bowl add a pinch of cornstarch - like 1/4 tsp. Add a Tbsp butter. Heat in microwave 1 minute. Stir. Add about a quarter cup of milk. Heat again for 2 minutes. Open and stir when the milk gets close to boiling over. Close and repeat. Then add about a half cup of cheese (I use Mexican shredded), a quarter tsp lemon juice, pinch of xanthum gum if you have it, and stir until smooth. That's it. Perfect creamy cheese sauce in the microwave.
PS. This method works great for southern gravy. Easiest method, and hard to burn. ❤
I can not imagine nacho cheese being from a real cheese.. processed or go home.
This is listed as a 3 1/2 minute video. RUclips added 6 minutes of ads. Ugh
Jalapenos are gross! But otherwise this looks awesome;)
😋 Yes, we love it. But I LOVE jalapenos! LOL.
sad that nobody can explain why the cheese taste like powder after making the roux/white sauce...as if it's some ancient secret... oh well
Hmm, I've never had that issue. So strange.
Cook the roux until it smells like pie crust. That taste is the raw flour taste, it has to be cooked off.
@@Kinte69 thank you.
I tried it with tomato sauce instead of the milk and vinegar instead of the brine and it tasted like shit.
Yeah, well...
Good Lord. This is the kind of stuff that gives Americanized Mexican food a horrible reputation.
American processed cheese-food? Really?
Do not subject your family and friends to this, people, please.
LOL.
American cheese the ingredient that helps to get melty cheese is sodium citrate. So if u swap out for another cheese and added a pinch of the sodium citrate u could get similar melty cheese. Modernist cuisine book goes into other culinary techniques
