This project looks like a good one for them - maybe using the smaller hexagon templates for a beginner/sampler project to see if they like it (I sure did!)! This is very nice indeed. But for quilt I know is going to be used and washed a lot, probably I would do a zigzag stitch between the hexagon for a much stronger join. What do you think of that idea ?

That's a great idea! I'd suggest using MonoPoly thread for the zig zag stitch so it is invisible.
I have started shortening my stitch length to around .7 on my Bernina instead of backstitching at the beginning and end of my seams.
