- Drying time for this jerky depends on climate conditions. If you live in a humid climate it could take 12 hours or longer. If you live in a very dry climate it could be done in 6 hours. The heat helps kill bacteria. Note this from Wikipedia: "Modern manufactured jerky is normally marinated in a seasoned spice rub or liquid, and dried, dehydrated or smoked with low heat (usually under 70 °C/160 °F)." I saw this recipe for the first time around 5 years ago, and made it for my nephew who was 6 at the time. It’s become our thing to do over the years. Every time he visits me in New Jersey we make it together. Using your recipe to make salmon jerky has become a way for us to bond, and EVERYONE in our house loves the jerky. Never lasts more than 2 days in our house. Thanks!

OK well I made this last night, and I told myself to add a little bit of spicy, so added a tablespoon of Dave's insanity sauce which is a hot sauce for people that don't know. And omg god I took it out this morning let it sit for two hours, it was delicious, omg amazingly delicious, for anybody that likes jerky with a little kick of hot you gonna try it, also, I took it to work and these guys that go hunting a whole lot devoured it so fast and asked me for more, also offering me money to make them some. You would think hunters know the best guys for the best jerky, I guess that little bit of hot did the job, oh and I added a bit of honey.
You did ad the tablespoon just on the meat after marinating? So the sauce stays on the final dried meat strips?
I always add hot sauce (and a lil batch without for the "other" folks who are worthy enough to share with :) ). Tonight I'm adding "Sting N Linger: Ghost Pepper Gnarly Hot Sauce outta Tempe, AZ. A new hot sauce to me a friend gave me last night cause non of his family would eat it or even open it, lol.
He said omg god.....that's double god....it must be good. I'm convinced, I'm making it.

Thanks for all the help, I just started letting mine marinate, I'm going to let mine get a little more dry but I made thinner slices so I'm going to cook it during the day while checking on it. I also want to comment on when you cut up your salmon this way and put it in the bowl it looked like you filleted a snake, pretty cool!

I added 2 more tablespoons of sugar and 2 tablespoons of red pepper seeds. was amazing both ways. It's silver season right now. I am using this as a starter for my in oven jerky.

I grew up in alaska. I have had all sorts of candied salmon/jerky. I made this one winter when I really didn't feel like dealing with the smoker and everything that goes into making jerky. This is the best/simplistic recipe I have ever used and if done right it's almost better than the traditional way of making smoked salmon jerky

Had my first salmon jerky in Seattle, WA a few years back. I didn't know it existed before that but it's the best type of jerky you can imagine. You'll be hooked!

I watched your video yesterday. Today I went to Sam's Club and got 2.78 lbs of salmon with the skin on. I made your recipe the same except put a bit of garlic powder in since I did not have a clove. Like you I marinated 45 minutes. I have a pro fryer that tells you how to make jerky. I made beef once but it was in to long was more like crispy bacon. Anyway, I had 3 racks in my air fryer. Did 125 F for 2 hours. Bumped up the heat to 150 for another hour. It turned out really well. Thanks for the recipe! Wish I could have left you a picture.
We have a long tradition of smoked salmon in norway, but not salmon jerky like this.. But this sounds like something I would really like to try sometime! I like all kinds of dried/cured meats, so I guess this would be yummy also!

My son’s father-in-law fished his own wild caught salmon in Washing state & made his own salmon jerky. I fell in love of salmon jerky. Three days ago bought the same salmon at Costco to make the jerky & I am so happy have found your recipe! Thank you 😋

I recently invested in a dehydrator and tried this recipe out, and oh my goodness, it's amazing! Everyone in my family loved it, they all tried to hoard it and not share with each other. Even my cat went absolutely nuts over this! (He didn't get much though, with all the salt from the soy sauce)
Also, I liked this so much, this video is literally the first and only that I've ever hit "like" or commented on.

I made Deer Jerky, had it sitting in BBQ sauce with season too tiny bit of Salt for a day before smoking.
Had it smoking for 7hours after smoking, I threw it in a Slow cooker for a hour . It was bit better than a butcher shop jerky. Very tender and juicy after the Slow cooker.
Thought this was pretty cool first time watching this video of baking jerky.

informative,seems simple to get a good result my oven however only starts out at 200 degrees so I don't know how that would work exactly & I'm thinking a fillet knife would work great cutting the skin & salmon

i tried this but used sweet baby rays bbq sauce as a marinade with liquid smoke and a sliced apple and then glazed it with honey and black pepper half hour before it was done. turned out pritty good.

10 THUMBS UP! Very skeptical at first but after making a second batch and changing some stuff, it is SOOOOO GOOOD. I'll never buy jerk again. Very simple ingredients. Store bought Jerky: gives me gas, always thirsty after eating a bag, hit/miss with the brand type, hard to chew on sometimes, and very expensive. I followed the recipe first try and it was good but a little on the salty side so I used light soy sauce. Add brown sugar and pepper. Then marinate for one hour. Afterwards, drain it then add in HOT bbq sauce (not sold at regular store) a couple tablespoon and mix it together. Laid it in oven at 170 degree ... made it at 2 pm and it was done at 4 am the following day so about 12 to 14 hours depending on how big you slice the salmon. Bottom line, just check the jerky stiffness at 10 to 12 hours and you get an idea. Use a dehydrator in the past for beef jerk and got sick. Also, doesn't taste the same as oven.

This marinade works well for smoking salmon too, just use less (or no) liquid smoke as the smoker imparts that good flavor. I add a bit of dill and garlic to mine, got two big king salmon all cleaned, filleted and soaking. Looking forward to smoking them tomorrow.
Point is, this is a great base recipe for just about any jerky or smoked meat, just season to your preferences, but you cant go wrong with the base. Good job dude :)

I know what you mean about it lasting not as long. I make beef & venison jerky in dehydrator and it doesn't last too long as well. I 'm sure the salmon is much tastier

Hello! And thank you for sharing your delightful cooking videos. I am wondering if this recipe could translate into using a dehydrator instead of an oven, and if you might know what the specifications for how long to dehydrate and at what temperature. Thank you again!
Hi Gavan. The Salmon Jerky would work very well in a dehydrator. I have one (sort of; it uses the sun's energy), but I haven't tested it yet. Dehydration time is difficult to pin down because it depends on the thickness of the fish strips and the humidity of the day. It also depends on how dry you want your jerky. Some like it chewy; others like it almost crisp. As for temperature, most jerky is made at a temperature that discourages bacteria growth, about 160°F (71°C). I hope that helps. -Dennis
