I make a dish very similar to this every Wednesday (yeah I'm boring like that :D) with different veggies. home made pesto is just the best! I also love it with fried cherry tomatoes or asparagus. This idea of ten dishes everyone should know is very goos. Honestly as long as those dishes (or even some of them) are healthy and relatively cheap, you're pretty much sorted! And once you know how to make them, you can start mixing them up etc if you want to. I'm moving out soon, and while I love love love cooking, I guess it'll be harder living on your own. I'm definitely going to check out these ten recipes :D

just a thought me lovely old mucker . . . could you do an absolute 'budget beginner's' version of each recipe? . . . salmon is very pricey and so easy to overcook and totally wreck, and for some reason lots of people have a comic aversion to broccoli . . . was thinking frozen basa, bottled pesto, frozen french beans - keep the new potatoes . . . would need a tweak as the frozen fish isn't so oily . . . but I like the idea of the beginner getting their confidence and then having an easier step up. People saying 'always skin side down' If you actually watch he's using the fats from the other side to help crisp the skin better rather than use any more oil. Makes sense.

Great recipe! Suggestion; I have found that mixxing the pesto, in a non-stick pan, on a low heat, with cream-cheese you get a lovely sauce that makes the salmon divine ... AND it can be used with other things, like pasta.
