In Episode 7 of FX’s “The Bear,” Ritchie faces his ultimate fear, that he may have no purpose… After being sent to a 3 Michelin star restaurant to polish forks, Ritchie begins to wonder if Carmy setting him up as a Stage is a learning opportunity or a punishment. However, at the pinnacle point of Ritchie’s career, he’s told to put down the forks and suit up for dinner service.
The pace, team coordination, and composure it takes from kitchen staff, servers, chefs, and expo, intrigues Ritchie. But it’s not until the Michelin-level deep dish pizza plate that Ritchie is sold.
