    We could not be happier with the amazing entries we’ve seen from our dietary departments for our “The Zest is Yet to Come” dietary contest. These team members have truly gone above and beyond to spoil our residents with a delicious citrus dessert.
    For her entry, Sharon Hunter, Dietary Aide at Marine Creek Nursing and Rehabilitation, created a beautiful Key Lime Margarita Cake. Sharon has worked at Marine Creek for 19 years and continues to use her creativity and talents to serve our residents delicious meals. We are so grateful for Sharon’s hard work!
    Learn how to make Sharon’s Delicious Key Lime Margarita Cake with the recipe below.
    Key Lime Margarita Cake Ingredients:
    1 tbsp Lime Juice
    2 Limes and Lime Zest
    24 oz Lime Gelatin Mix (prepared beforehand)
    2.5 lb of Cake Mix
    1.5 cups of Powdered Sugar
    2 Eggs
    16 oz Whipped Topping
    1 tsp Vanilla Extract
    2 tbsp Butter
    8 oz Cream Cheese
    1 cup water
    Instructions:
    1. Preheat oven to 350°F
    2. In a bowl, mix your cake mix with water. Add in your eggs and lime juice and mix altogether.
    3. Grab your cake baking pan and spray with non-stick spray. Add in your cake mix and put in the oven and bake for 35 minutes, until cake if fully cooked.
    4. In a new bowl, add in your powdered sugar, cream cheese, butter and vanilla extract. Mix until all ingredients are combined thoroughly.
    5. Once your cake is complete, cut your cake in half. On one of the halves, put your layer of gelatin on top, and top with your second half of cake.
    6. Ice your cake all around with your icing and decorate. Top off with lime drizzle and your cake is ready to serve.
