How to make Puerto Rican Rice and Beans - Simple Recipe

    Rice:
    2 lbs medium grain rice
    ¼ cup olive oil
    5 cups water
    2 tsp salt
    Beans:
    4 cups of cooked beans
    ¼ c. vegetable oil
    ½ cup of sofrito (see link below)
    8 oz tomato sauce
    1 pack sazón
    ⅓ c of olives
    4 cups of water
    3 bay leaves
    1 cup of squash
    Salt to taste

    My mother is Puerto Rican and made the best rice and beans. I have been caring for her since she got sick and I've been having to learn to cook. This is something I really want to learn to make for her.

    This is great! I had no idea there was squash and other ingredients in beans until now. Would love to see a video about mofongo or arroz con pollo...two of my favorites!

      So glad you like this! We'll definitely keep your request in mind and work on some vegetarian recipes. (Spoiler alert) We are doing bistec this coming week, but I know alot of people who adopt the same recipe we'll be making and make it with vegetarian meat. I also know that the company Beyond Meat is making some really awesome products, so maybe we'll try making it with that sometime!

    I plate the beans in bottom and rice on top. It prevents the rice from being soggy and the beans from drying out, win win.

    I love to add pigs feet and smoked ham or smoked bacon, thick cut from the Hispanic butcher♡♡
    I boil NY pigs feet 2 times to really clean them, boiling in clean, fresh water each time. I also saute the smoked bacon and then add this to my pot of beans so that the pigs feet absorb the flavors from the bean stock:))

    My family makes exactly the same food with same ingredients and interpretation and they not all from the island. Titi and Tio learned on their own as well my mom and pops. We didn't learn from Abuela. Beautiful food!! Ay tiene Hambre

    My dad taught me how to make rice AND to make it with pegaito. You didn't mention pegao. The little cul-de-sac where my abuelita lived in Mayagüez, her 6 neighbors would exchange dinner among each other and the pride of each was who could make the deepest pegao without burning it. Boy, did I love that part. My abuelita could make her pegao about 1" thick. 🙂

      Oh yes, the pegao is the best! What was your family's trick for getting the pegao to work?

      @@JeffandJosPuertoRicanKitchen My dad told me that you should put more oil than necessary and once you let the water evaporate a bit then, with the flame higher than low but not medium, without turning the rice, you let it cook for 20 minutes. Afterwards, you can turn the rice without reaching the bottom. You're allowed to add a bit of water if rice needs to cook a bit longer. I have only been able to get about 1/4" of pegao. 🙂

    I'm Puerto Rican
    I make my beans, without olives, my family don't like olives in their food, also no bay leaf. I do put in my beans ham or Italian sausage.
    We also prefer to cook the dry beans first.

    Great video... I miss the Island a bunch. I was stationed at Ft Buchanan for 4 years and then I got out of the Army and stayed there for another year. I loved it and has so many great friends. And I loved Rice and Beans with Platinos

    Great video, Jeff and Jo! Love your content. I have a question, how do you best reheat left over rice if you don’t have a microwave? Is there a trick to reheating on the stove that we should know?

      Great question! My mom loves to reheat on the stove. She uses a frying pan and adds a bit of water at the bottom. Low heat and you can cover it.

    After moving from PR, I stopped adding pumpkin to the beans because I can't find the same one here ... never thought of using sqaush! I'm adding it to the grocery list to try it next time :)

So basically u2 have become a fun learning little class honestly we truly enjoy u 2. My just waiting to see make the fried plantain lasagna...❤❤

      @@justicelachicanaricana4407 oh also! Here's the recipe for pastelon (which is how we call the plantain lasagna, I know people have different names for it). The one thing is that we use vegetarian meat in the recipe but you can just substitute the same amount with ground beef which is the most traditional. ruclips.net/video/bbl-Vffqmus/видео.html

      Thanks Rubi!! We used medium grain rice in this video. We've used different brands from time to time, including Goya and Catalina. The rice may vary a little bit in how much water it needs (some small amount like 5%) but I think that has as much to do with the humidity as it does with the brand.

      You can. I would leave it without the top for those first 6 minutes on high and then put the top on and let it cook.

    is there a substitute for the olive oil and squash?

      You should be able to switch the olive oil for just about any other fat (corn oil, canola oi, etc). For the squash, if you don't like it totally fine to leave it out. Jo's family is really big into it, so we always add it. But I also know a lot of people who leave it out.

      You guys speak English did you guys go to a private school? I know many people speak English in PR but you guys barely have an accent 😊.I really appreciate the rice 🍚 video experiment you did. It addressed many of the questions I had growing up. My mom was blown away when you opened the lid lol 😆 she was like “nooo😂

    They showed me that you place the lid on the rice once the water evaporates. Then you lower the heat and cover for 25 minutes. And my rice is 🔥. But pretty interesting

    Cooking the rice for two, I cut the ingredients in half. So 1lb rice, 1/8 oil, 1 tsp salt and 2 1/2 - 3 cups water. Should I also cut the cook times in half? So for the initial boil, do 3 minutes instead of six? Then after that cook on low for 10?

    Not sure what happened but I followed the rice instructions exactly and ended up with a rice consistency of mashed potatoes. It was basically a paste. 🤮

    I'm sorry but that's not the way puertorrican make white rice, I'm 63 years old born and raise in p.r and that's the way you make arroz con dulce

      Heavenisthelimit, clearly, surely you dont know such versatile ways to cook rice and beans. As long as you use sofrito, sazon, tomato sauce as the base, you can add any color beans, punkin, ham, potatoes, salami, etc. These young kids are doing great so far. I was born in PR, grew up there, I KNOW PUERTORICAN FOOD. I KNOW HOW TO COOK IT TOO. Clearly you may have a different way to cook Puerto Rican food, and clearly if it is close to Jo's it's going to be...clearly, good. Be blessed.

      You can check, I am not the only one that think the same.
      Anyway, I stand in what I said.
      I Cook since I was 9 (65 now) AMD I have been developing my own style thru the years.
      Even for a sofrito I have my own formula, no preservatives. Ají I use is not the common one.
      Cooking is a big universe.
      Just ask me what to Cook and I'll be ready.
      Good look to these young huy. Evolve.

      @@heavenisthelimit1 your comment was harsh. These kids are young, they need to be lifting up, not putdowns. Yes, I could change the step when the oil was mixed with the rice, but, it did not harmed the finished product. I agree that ajices dulces,(Culantro,a long flat green leave to use in sofrito) maybe pimienta negra, might have helped...but not by much. I also have cooked for longer than these kids been living, and that is the only reason why I know they are doing very good. I am sure that you are a great cook. Be blessed.

      Everybody cooks different. That's is why we are here to learn different techniques. I like to re-fry the rice and then I add the water. But I will try your method also.
