INGREDIENTS:
🔹 1.5 lb chicken breast cutlets
🔹 Salt and Pepper
🔹 Extra virgin olive oil
🔹 1 zucchini cut into half moons
🔹 1 red bell pepper cored and cut into strips
🔹 ½ red onion sliced
🔹 1 cup about 5 oz grape tomatoes
🔹 1/3 cup basil pesto
🔹 1/3 cup cream
🔹 Juice of ½ lemon
🔹 Zest of 1 lemon
🔹 Toasted pine nuts for garnish optional
🔹 Fresh basil for garnish optional
I made this last night for my boyfriend and me and it came out delicious. I love that it's healthy but also ends up being a lot of food.

I made it for last night supper and had roasted potatoes with it but tonight I cut the chicken up added rice and little hot sauce it - it was a lot better with the rice - yummy

I made this for my husband and I but I forgot to halve the sauce, so I now have sauce left overs for the freezer for the next batch.

What do you use as the cream? Heavy cream or half & half?

What kind of cream did u use
I don’t salt my veggies until after I cook them as the salt makes them soggy. Otherwise beautiful!!!
What kind of lemons do you use? I notice that they're not bright yellow like the ones at the store.
Nothing special about these lemons. It's probably because I zest the lemon prior to squeezing it, which takes the luster out of the color

That can be 1/3 cup of pesto and 1/3 cup of cream… it seems to much in the cup.
Chicken breast is soooooo overrated man. Dry, tasteless chewy anytime. It should be sold as pet food.
Not necessarily depends if you over cook it. Try also marinating it for about 3 hours or bake it
