If you think Frieren dont like Demons....as she killed Draht(ger=wire). She didnt said only "that's one down", in the japanese version she says "ippiki". So she counted him as an animal, not a person. Also you see how cruel Frieren takes down Demons. With Lügner(ger=Liar) you get the fact that Fern doesnt use Zoltrak, but a modified demon-killing Zoltrak(her spell is white, Quals was allways black). So in the second against Qual, as Frieren killed him with her own version of Zoltrak, she humilated him deeply. Showing him his magic was not only overtaken, but now manipulated to kill his own kind, killing him in the moment he realised the harsh reality. About the name of the manga, it was allways "Sou Sou no Frieren"(=Frieren the Slayer), but japanese is tricky. It could mean also "Frieren at the Funeral", so at the start people thought about the Title as a sign Frieren see all Friends die, because she is allmost immortal. With this episode it blew it up and cleared the meaning. Frieren is the Undertaker.

One of the things I really like in this show is how human like the characters feels. Like in other shows there will be tons of verbal exposition, characters will talk 5 mins about their powers or the mechanics behind them. Not in this show - everything is straight to the point. No extra fluff. No extra exposition. No unecessary dialogs. Show don't tell is always the better story telling technique and this show excel in this.

When asked again later on about why she collects these spells, she says because an idiot complimented her about it. As to who this idiot is, you should know already. Further on we will see what started this obsession and how trivial spells (folk magic) like the one she collects may have more impact in the fate of the world than what one would think.
Flamme was kind of a pioneer for mankind magic, that is not to say they invented magic, she rather encouraged makind to learn about it. Demons on the other hand are naturally inclined to it, developing magic in ways that no one else can comprehend, easily.
To add to it, i think mankind/humanity magic included the other friendly race with humans like elves and dwarf to my understanding. Sometimes i see people confused bcause frieren is not “human” but i think terms of magic, they are classified as using humanity magic. At least thats what i’ve been getting.
