    Excellent content, as usual. I recommend soaking the meat in a vinegar salt water brine for several hours, boiling in plain water for 1 hour or until very tender, coat with dry rub, then slapping them on the grill for 15-20 minutes just for color, flavor and texture.

    Hello Vinny, I when I lived in the U.P. of Michigan, an old fisherman gave me a recipe for a coke marinade for brisket. I’m definitely not a fan of the coke marinade. All y’all do a great job of keeping it simple enough without using something like coke. I prefer a salty brown sugar cure myself, also maple syrup works great with salt

    Nice Vinnie here in tn we catch stripe some people call em white bass and we cut em up un stripes and boil it in that crab boil for bout five mins and dip it in melted butter you got poor mans lobster

      I do this all the time, especially with "trash fish". People around here claim to know that certain things are good eating or not, but they ALL fail the blind taste test...
