I've often wondered if there's a color scheme for the various instruments that would make sense to me.

Didn't hear you say, you need to change the track channel from the default 2 to 4, in the routing dialog.
I'm not sure what you mean. I cover the routing at about 2:10. If you mean something else, let me know :-)

By the way, is there a way to easily change the channels' names, like drums, bass, etc.?
It would be great if I could give names to them so I will know what tracks I am looking at☆
I didn't find a way to do that. But if you use the lua script, it adds the track names automatically.
