For anyone wondering how this is the most humane way to kill a crab: this comment is for you. The ice is used as a sort of sedative for the crab. They enter a sort of "hibernation" at 4°C or below after at least 20 minutes. This process is called insensitising. You also need to make sure the ice bath is at the same salinity as their home environment so they don't die the stressful death of osmotic shock (she did not do that in this video). Once the crab has been insensitised, you have 10 seconds to destroy the nervous system before they recover and are able to feel what you're doing. Crabs have two ganglia that need to be destroyed, both easily accessed from the bottom of the crab. You get those two spots within those 10 seconds and be doesn't feel a thing.

Where she drove the knife is actually a very effective and quick way to kill it. Super humane. However instead of freezing it what we always did was put basically bands on the legs and claws so that it could not pinch while we got to the abdomen.

What you should actually do is chill the crab for 20 minutes at most . This is to numb the crab so they don’t feel pain. Then either dunk it into boiling water or you hit right at that triangle part to kill it. You can hit it against the corner of a counter and it should go limp immediately.
