Can you do this with the einstar?

Yes, Einstar can generate STL mesh files too. You can follow the same procedure to complete the Reverse Engineering.
The only thing is that Einstar may not have very good accuracy standard compared to EinScan series, so usually we use EinScan for Reverse Engineering, not Einstar.

thanks for the demo, does seem like a lot of cad work to get there. I use Fusion 360, will the process (roughly) be the same with F360 WRT the final result? thanka much

Sorry both of our software engineers haven't used Fusion 360 before so we don't know if they have very similar procedure. But we know recent year newer version Solid edge has made a lot synchronous mode improvement which many users said (its CAD) it's superior to Fusion 360 while Fusion 360 is good at CAM at the other end.
