Mrs. H.: I completely understand about hidden pests. One family Christmas gathering, I set out a relish tray of pickles and things from the grocery store. My niece during the gathering proceeded to tell me that my pickles had a worm inside them. I felt sorry for her, but I got to blame the grocery store. So yes it is possible to miss a clever hidden pest in your produce. You said Mr. H. was resting, why didn't you take a rest as well, you certainly deserve a good rest from all the work you do.
Just a little tip. I leave my frozen trays in the freezer until my freeze dryer is in the 20 degree range before I add my trays (even after only 4 hrs in the freezer, they are still frozen). Please don't skip the freeze part, it will get down to -40, just let it do it's job. Also, ALWAYS ALWAYS defrost after each load.
Do you have a video on why you prefer freeze drying some of your onions and dehydrating is it because of different uses or is it just a matter of space? Is there a difference in the flavor etc. etc.
👏👏👏👏 Onions, freeze dried, can go 2 years without an oxygen absorber, as long as your seals hold, and all other variables you mentioned, dry, cool, dark, etc, are met. I've been doing this a long time too. 40 + years. Long before the harvest rite, and home vac sealers for jars existed. We used a 6'x8' vacuum chamber. We still do for vacuuming jars in bulk. (Blessing of an architect/engineer grandfather). Our original freeze dryer came from a coffee factory, where they freeze dry coffee (instant coffee). When they changed to a much larger freeze drying system, my gramps bought their uses freeze dryer. Now we use that for making bone and feather meal, blood meal, and dog food, and have a much larger updated industrial freeze dryer for our food. But, it's the same principle. We refreeze or food too, but we still do the freeze cycle because a freeze dryer freezes to a much colder temp than a regular house freezer. I can't say that if matters or not, but we do it, because those temps aren't an accident. Anyway, your onions look great. Looking forward to your dehydrating video. I e only been dehydrating for a few years, and I always learn something from your dehydrating videos. 😁👍❤

I made onion salt with my green onion leaves. You just blitz them up with some kosher salt or sea salt spread them on a parchment lined large cookie sheet and put it in your oven on the top rack at 175°. Once it has preheated to that then you turn the oven light on and you turn your oven completely completely off. and 24 to 36 hours you most likely will have a thin brick of onion salt. Then just blitz it in your blender again and Walla. I don't put them in my dehydrator or in my freeze dryer first. It works like a charm!

Fancy pants freeze drier, I think it would pay for itself for me in one or two winters. Make those protein filled caterpillars nice and crispy. 🤮 I don't understand why people not only eat bugs but seek them out. Does your pre-freezing save power as well as time? I need to order a mason jar funnel 🤯 I bet Nana has one but she never let me in on that secret. Could you just put in a squirt of nitrogen or CO2 to displace the O2? I need to catch up on the vids to see what the outcome was with the soil.
