I've shown an easy way to prepare a complete Vegan recipe using Soya bean and Red Amaranths. This recipe is rich in protein and fibre where you can add to your daily meals as a main course or as a side dish. You can increase or decrease the measurements of the ingredients depending on your choice and taste. You would definitely love the taste of this vegan stir fry recipe.

INGREDIENTS :-
Soya Bean - 250 grams soaked overnight and Boiled with salt & turmeric powder.
Red Amaranths - 250 grams cleaned & finely chopped
Onion - 1 medium sized slice cut
Green Chillies - 2 nos. slice cut
Crushed Garlic/Ginger/Cumin Seeds/Peppercorns as needed
Tomato - 2 medium sized finely chopped
Curry Leaves - 1 sprig
Coconut Oil - 2 Teaspoons
Mustard Seeds - 1/4 Teaspoon
Turmeric Powder - 1.5 Teaspoons
Coriander Powder - 2 Teaspoons
Chilli Powder - 1 Teaspoon
Kashmiri Chilli Powder - 1 Teaspoon
Coconut - 1/2 cup grated
Water - 1/2 Glass
Salt as needed
