Bacon Burnt Ends
I first tried Bacon Burnt Ends at Heim Bbq in Fort Worth Texas. After that first bite, I fell in love with these sinfully, delicious morsels.
Skip ahead a few years and several pork bellies later; I had the pleasure of running into the owners, Travis and Emma Heim, at the Certified Angus Beef BBQ Summit in Ohio.
I immediately brought up those delicious Bacon Burnt Ends ,and they assured me that they are still on the menu and folks still go crazy over these melt-in-your-mouth treats.
As far as I know Travis came up with idea to cut slab bacon into cubes and call it “burnt ends”. I sincerely thank him for the idea and for sharing it with Texas and the world!
It just so happens that my local Sams Club now has Wright’s Brand Bacon unsliced, so I grabbed a couple packs to make my own version of Bacon Burnt Ends.
I sliced the slab bacon into 1 inch cubes and then tossed them in a mixture of 1/2 cup Light Brown Sugar and 2-3 Tablespoons of Killer Hogs The BBQ Rub.I placed these bacon burnt ends on a chicken Rack - you can find one here: bit.ly/KHChickenRack and placed them in my Ole Hickory Pits CTO Smoker with lump charcoal and a couple chunks of SmokerWood.com Cherry Wood.
You can cook these on any smoker, just hold the temps steady at 250-275 and keep the smoke light and mild.After 1 hour in the smoke, I flipped the bacon burnt ends - so they will cook evenly and to prevent them from sticking.Then after 2 hours of smoke, these little bites of sticky goodness were ready for a glaze. I removed them from the smoker, placed them in a small pan and tossed them with 18oz Killer Hogs The BBQ Sauce bit.ly/TheBBQSauce and 8oz Kosmo's Cherry Apple Habanero Rib Glaze bit.ly/KosmosCAHGlaze - and then placed the Bacon Burnt Ends pan back on the smoker for 20-30 more minutes.
After the sauce has started to caramelize and the burnt ends are tender, it's time to dive in. It's hard to eat just one... they are rich, sticky, sweet and decadent. One thing is for sure, these Bacon Burnt Ends makes for one sinful appetizer that you have to try!
Bacon Burnt Ends Ingredients
- 4lbs Wright’s Unsliced Bacon
- 1/2 cup Light Brown Sugar
- 2 Tablespoons Killer Hogs The BBQ Rub - bit.ly/TheBBQRub
- 18oz Killer Hogs The BBQ Sauce - bit.ly/TheBBQSauce
- 6oz Kosmo’s Cherry Apple Habanero Rib Glaze - bit.ly/KosmosCAHGlaze
Bacon Burnt Ends Directions:
1. Prepare Smoker or grill for indirect cooking at 250 degrees. Add 2 chunks of cherry wood to hot coals for smoke flavor.
2. Remove bacon from packaging and cut into 1 1/2” strips lengthwise. Cut each strip into 1 1/2” cubes.
3. Combine the brown sugar and Killer Hogs' The BBQ Rub in a small bowl. Place the cubes of bacon in a large bowl and season with the sugar mixture. Toss to coal even.
4. Lightly coat raised cooling rack with canola cooking spray and place bacon burnt end pieces on the rack. Use multiple racks if necessary
5. Place the racks on the smoker and cook for 1 hour. Flip each burnt end piece over and continue to cook for 1 additional hour.
6. Combine Killer Hog's The BBQ Sauce and Rib Glaze. Remove the bacon burnt ends from the smoker and place each piece in a half size aluminum pan. Drizzle the sauce over the top and gently toss to coat even.
7. Place the pan back on the smoker and glaze for 20-30 minutes. Remove the pan from the smoker and allow too cool slightly before serving.

@@cecejamesable This is kind of a long post but it should address your question fully without rambling and I've provided links for options that are great for someone that is starting out. Most people will recommend a really expensive brand but to be honest you can get just as good of flavor imo on a $75-$100 smoker as you can a $500-$1,000+ smoker. The main difference is just the quality of materials used in the construction and different styles of design. For a beginner it's probably best to start off with a budget friendly one and then if you enjoy it purchase a more expensive one.

You can get a much more budget friendly smoker such as a Dyna-Glow that should last for years as long as it is taken care of and isn't left out in the rain/snow.

Most of the negative reviews you see for cheaper smokers are because of user error or they compare them to other smokers 5x their price. They might say the metal warped after using or paint melted. If that happened I can almost guarantee it's because they had the fire extremely hot.
It's a smoker not an oven. They can't expect to be getting a budget option up to 500* and expect it to last long. That's not what it was designed for. I've used plenty of $20-$30 grills over the years from some of the cheapest brands and I've never once experienced the things ppl complain about in the reviews of grills/ smokers.
The Expert Grill Superior Kettle Grill is also a great option. It has the rack that flips up on both sides that allow you to access the charcoal/ wood without having to pull the whole cooking rack out. It also has the charcoal/ wood baskets that sit on the sides for cooking with indirect heat. These are accessories that have to be purchased separately with other grills but come inside the box of the one I'm linking.
Even though this is a grill it's big enough due to the kettle style that you can smoke a big ham or Turkey and use a drip pan underneath with the charcoal/wood sitting underneath over to the side. It's a great option because you can grill hamburgers and steaks or smoke meats for $97. I've seen some ppl get it for as cheap as $68 when on sale.

You can also make one yourself at home for almost nothing if you have access to the materials. It's a great option if you enjoy building things. There's lots of videos on RUclips showing how to make homemade smokers made out of filing cabinets, metal barrels, and metal trash cans.
This might've been longer than you wanted lol but I wanted to address the subject properly if you're interested because you're gonna see many ppl talking bad about cheaper smokers and don't get me wrong the more expensive ones are constructed with better materials but for someone who is only gonna smoke meats occasionally a cheap smoker will do just fine and provide just as good of flavor. With that being said the Weber brand is respected and praised by everyone.
