Mouth Watering Chicken Biriyani that is Driving the World Crazy!

  • Tender chicken in a richly spiced sauce, layered up with fragrant, flavor-packed rice and topped with saffron and thinly sliced fried onion. This Chicken Biryani is one of those special dishes that gets passed down through generations. Second helpings are a must!
    Ingredients For Chicken Marination:
    1 medium size whole chicken with bone, cleaned and washed
    3-4 tbsp oil (we used heart healthy avocado oil)
    Fried onion to taste
    2 sprigs of mint leaves
    2 sprigs of cilantro leaves
    1 cup yogurt or to taste
    1 tbsp coriander powder
    1 tbsp cumin powder
    1/3 packet of biriyani spice blend
    1 tbsp chili powder or to taste
    2 tbsp Ginger Garlic paste
    4-5 green chillies or to taste, slit
    1.5 lime (squeeze lime juice)
    Salt to taste
    Ingredients For Rice:
    2 Cups of Basmati Rice, washed and rinsed
    3-4 Cloves
    3 Bay Leaves
    2 Mace
    10 Whole Black Cloves
    1 Cinnamon Stick
    2-4 Green Cardamom pods
    2 Black Cardamom pods
    Salt to taste
    Oil or Ghee to taste, melted
    4-5 green chilies' or to taste, slit
    Other Ingredients:
    4-5 tbsp milk infused saffron
    Cashews for garnish
    Process Steps:
    -Add oil of your choice into medium cut pieces of chicken and mix to distribute the oil evenly to the entire batch
    -The 1st step is to marinate chicken with all the essential ingredients, let's start by adding in the oil and distribute evenly so we can create a good surface area for the spices to absorb onto. Continue to add in the chili powder, cumin, coriander, ginger garlic paste, turmeric powder, pepper, and salt. Mix these ingredients lightly and then add in cut cilantro, mint, and green chilies'.
    -Squeeze lime and pour in along with fried onion flakes. It's time to add in some yogurt and last but not least the Biryani spice blend mix to top it off. Distribute evenly and set aside to marinate for about 30-45 mins.
    -The next part of this process is to wash the basmati rice (long grain rice). Fill a large bowl with cold water and pour in the rice. Use your hand to stir the rice in one direction. The water should get cloudy, so pour off the cloudy water. Refill the bowl with water. Continue rinsing the rice until the water is clear. Washing the rice removes surface starches and any debris.
    -After you have you rinsed the rice, soak it. Place the rice in a bowl of cold water and let it soak for 30 minutes to 2 hours. Soaking the rice helps the grains expand and be fluffy.
    -Cook the rice with the blend of spices. Add water to your cooking pot until hot or boiled and gently add in oil, salt, bay leaves, black cardamom, cinnamon, whole back pepper, whole nutmeg, jeera seeds, cloves, mace, and star anise.
    -When the rice is about 70-75% cooked, strain all the water out.
    In a heavy bottom pan, add oil or ghee and the marinated chicken. Cook for about 7-8 minutes and layer the biryani by adding rice.
    -Warm 4 to 5 tablespoons of milk in a microwave or in a small pan on the stove top. Add ¼ teaspoon of saffron strands. Stir and set aside. Once the second layer of rice is topped off, pour in the saffron infused milk.
    -Once it's cooked remove the lid and top with a little more fresh coriander and cashews and then serve.
