I could look for a simpler video than this one and I found nothing. You've made it so simple and explained in 2 languages. I love the idea of putting it in cling film, and drying it with it, that's such an easy and novel idea than using casing (ofcourse casing add's a different flavor). Thank you!!
This recipe is authentic to the previous one. I dry in the sun on banana leaf on both sides for health reasons and then bottle it. I don’t refrigerate lasts for six months

Hi Vaal, You have explained the procedure beautifully. Kudos! But even using 60 kashmiri chillies, why was the pork not firey red in colour (1.)? 2. How can you smoke the meat in a glass bottle? I mean there's no point in doing this. You could have alternately given the meat a little sun instead? (My personal view) What if you let them be in the bottle itself and spoon out the required qty. when needed? Thanks a lot though Val you were great. Next time Val, use your bare hands instead of these oversized gloves. Just kidding. 😂
Thank you so much. Liked your suggestions thank you. But Trust me whatever I showed in the video is also good. If you know that pickles we usually put in Glass bottle than keep for Sun. Also the smoke did went and gave the aroma inside the bottle too.
As usual i used to carry Indian fresh salted or cooked Pork, each time i returned abroad. This thing happened once, beyond my control. I had applied good amount of salt on (unwashed but clean) boneless Pork chunks and as the liquid from the meat was released, i used to drain the same, to prevent contamination in the salted Pork. This way i could preserve the meat for long periods without the necessity to refrigerate the meat. This type of Salted Pork is easy to preserve and transport without hassles. It doesn't even have bad odors too💯 This particular trip got postponed suddenly after applying salt on Pork, yet i was able to carry the Pork safely without refrigerating it even for a single day😁 Despite delay the meat was free from bad odors 💯 I'm wondering if this method be used for your recipe too since you marinated the Pork in spicy marinate containing vinegar. Am not from Goa, but enjoyed trying Goan Chorizo since childhood due to my parents friendship with Goans. I was bit disappointed with some of the methods used in preparation of Chorizo as far as hygiene and quality of meat used in the process. I never liked the Beef casing used cos its sold in open places with chances of dust, insects and flies resting on it. That's why i was pondering on how i could prepare my own Chorizo more hygienically. I was also wondering how i could use same ingredients to cook Pork instead of using Chorizo. Am thankful your recipe gave me solutions to all my issues and will soon try it . I especially thank you for using plastic film as wrappers inspead of Beef casings, although Vinegar may react even with food grade plastic if left for longer periods. I used to buy Chorizo at Mapusa market whenever i visited Goa. The person who does marvelous traditional Chorizo is a friendly lady, Clara Fernandes. I observed her Chorizo are meatier too. Using a glass bottle and tapping the edge of it with a metal spoon is asking for trouble. The glass bottle edge will probably chip and the shards fall in the product. The consequence of ingesting such a product can prove catastrophic. USING A WOODEN SPOON IS PRUDENT.

How about spreading the meat in a big thali and smoking it for some time and then filling it in the bottle again

It's Better than nothing if you want to sun dry it.
