Maam I tried zarda recipe...however when I cooked rice second time with dryfruits ghee and sugar, rice remained uncooked and became tight. Even pressure cooker couldn't help. Could u pls share some tips
Hi dear....I am watching yr query 11 months after you posted ...but my problem was the same..so I tried another version of this from Maharashtra....you do everything like mam has said...only instead if adding sugar directly, make a chashni or pakka paak ...to make this chashni ,you take sugar which is 1.5 times that of rice...like for 2 cups rice you will take 1 n half cup sugar....then add it to a cold pan and enough water to just about cover the sugar...put the flame on medium and start stirring...soon sugar will melt and start frothing and bubbling...keep stirring..take a drop of this and put in a katori of cold water...it the drop forms a ball,then your chashni or pakka paak is ready.. if not, keep cooking until you reach this ball stage...turn off the heat..(this paak must be done on medium flame)...now slowly tip this chashni into your cooked rice or tip the rice in this chashni( either way)...Now put a tawa on flame first and then put this rice pot or kadhai on that tawa. ..this way pot wont burn......then add the saffron infused milk as mam has said...now put the lid on and on lowest flame cook until done....this way the rice wont be lumpy but it won't be hard...and to check if rice is done I always take an oven skewer or chopstick....this wont break the delicate rice...otherwise rice breaks if you use large palta or spoon...Hope it helps dear
