    Gonfu brewing is straight out the best, there's no going back

    In my opinion one important factor is that each steeping is getting hit with the appropriate temperature water each time with minimal temperature drop over a 3 minute Western steeping for example.

    But at the same time that means it ruined mediocre tea that I used to be able to drink.

    Here's some tea math. 4oz is almost exactly 100ml. If you have a tea session with a vessel around this size and the tea that steaps 7 times or more you've had almost an entire wine bottle, or close to one liter of tea. Depending on the tea this would at most cost me 2 dollars for one session.

      If you search "Mei leaf tea brewing guide," you can find a chart in pdf form that tells you how to do gong fu brewing with any type of tea, except matcha. He's got a separate video on the various ways to brew matcha. Don is one of the few people advocating gong fu brewing for delicate teas like green, white, and yellow tea. His methods are well researched and yield great results.

      @@painfullyaware5221 I appreciate the info! I usually drink Sencha and Darjeeling which I know isn't typically brewed in this gong fu style but I'm interested in trying it.
