    Great video! My wife owns a couple of tea ceremony shops for foreigners in Kyoto (called Camellia) and I help out a lot. I'm sure I have made well over 10,000 bowls of matcha in the last few years. Here is my method of making a perfect usucha. 1) Drag the whisk very slowly around to spread out the powder in the water, breaking up clumps and allowing the matcha to dissolve. 2) Start whisking vigorously, moving backwards and forwards very fast, and side to side very slowly. It's all in the wrist. 3) Most importantly: SLOW DOWN SLOWLY. Start really fast and slowly decrease the speed as if you are a robot and your batteries are empty. It takes about 30 seconds of whisking. Following the steps will give you a perfectly creamy froth with no large bubbles every time.

    I was waiting for you to justify how your hand-whisked was better than the milk frother, but you totally owned up. Nicely done, sir 👍 I admire your excellence in pursuit of great tea.

      Same here!! I was about to comment that I think the milk frother yielded nicer microfoam but he went on to admit the milk frother did a better job, especially for beginners

    They're sometimes called froth wands. I use old fashioned whisks myself. If you keep the whisk near the bottom and stir you get a thicker froth with smaller bubbles, when you pull the whisk out of the liquid, or stir it near the top, you get larger bubbles. Sorry, I'm a coffee guy. I love tea as well so I am learning a ton from you. Thanks!

      why we never make it with boiled water 100 degree? i heard that boiled water will extract all the antioxidants in the green tea. is this right?

      Just Me. + boliled water destroyes it. That's the case whit all of the green teas 60/80 degree is the max.

    You have a very beautiful wife! I recently decided to get into matcha when I remembered enjoying matcha flavored pogi(might be wrong) and one time I ordered a knife from Japan and they gave me a tea bag with tea that had a grassy flavor and I remember liking it. Well, I remember being at a family gathering and my relatives are "hippies" they were drinking this weird drink and asked if I wanted to try some and I said sure. Well, I remember feeling oddly amazing calm but alert. My parent joked there was probably marijuana in it but, thinking back I think it was matcha! It was cold and I remember finding it refreshing. I ordered some on amazon to see if that's the stuff. Kind of random I know, thanks for the video I enjoyed it!

    Excellent video, just discovered Matcha. As has been mentioned, the ceremonial way in which the Japanese do things pays respect to any process. They are to be admired as a people and as practitioners of sweating the details.

    I have never tried matcha and can't wait to expand my tea experience as coffee gives me stomach aches and I want to try different teas. Thanks for sharing your experiences with us here in California and I will definitely give you a thumbs up👍👍👍

    Love the Smell the Matcha in the Morning! Thanks for all the Great ideas. Currently making Lattes with Half&half or Coconut milk-cream and sometimes add a little butter and maybe sweeten it with tad of Royal Honey.

    I appreciate the jam jar version because in reality tea can be a humble-at-home experience, or it can be an "elevated" commercial experience with special gadgets etc. It's great when a person can make TEA with a minimal amount of EXTRA stuff because some of us just don't have space for shakers etc. Etc.

    A lot of places tend to refer to the methods as thick or thin matcha instead of their Japanese names. Also, from my understanding, ceremonial grade matcha is typically intended for thick matcha whilst thin matcha can be made with any grade really. To each their own though, I’ve been given the gears before though for “wasting” high grade ceremonial matcha by making it thin. I usually keep 3 matchas around, one lower grade for mixing with food and drinks, a higher grade for thin matcha, and a ceremonial grade that I break out one in awhile for thick or thin. Great video

    Thanks for posting this informative video. I have been consuming matcha regularly for past five years and never knew that a decent matcha can also be prepared simply by shaking. This technique would be handy when I am in the office.

    Great video, I bought matcha tea at whole foods. Not realizing you need a whisk, which I found out when I read the instructions on the can. Now I know I just have to use a jar with a tight cover and do not have to buy a whisk.👍

    I Love Mactha and truly appreciate all your videos on it... I was expecting to find out I was doing everything wrong when making Matcha, but finding out that my little hack of using my milk frother when I'm at work everyday to make Matcha is one the best ways to make it and that what I have been doing is actually called Usucha is AWESOME !!!! I also never would have thought about making it with cold water, as I would have thought it wouldnt dissolve as well in cold water but now I cant wait to try the cold Matcha as well... Thank you !!!!

    Brand spanking new to Matcha. Mei Leaf videos are a wealth of knowledge. Even though I live in The States, no issue with using mL and degree C. I’m a chemist, so metric is always the choice of measurement. Giant thank you, and hope to visit your shop after COVID.

      Ro Mama if you knew what you were talking about you would be aware that certain flavors only present themselves at certain temperatures, the same is also very apparent with coffee. As it cools down more subtle notes can be tasted, and when iced this effect is obviously enhanced greatly 😁.

    I tend to be the traditional matcha maker as I do have the whisk and bowl but I must admit that sometimes in the morning when I want my matcha quickly, I have used the little battery whisk and that does make a nice tea! Haven't used the jelly jar or cold myself yet (although I have tried a matcha late at the local tea shop) but in a pinch, a good idea. I love my traditional, but I can see that if you can't get or don't have access to obtaining the traditional Japanese matcha style brew ware (OK so you don't really brew it) then these would be good options for someone just wanting to try it.

    I’ve found that simply putting it in a shaker, about 4oz of water and some ice, poured over some bright flavored ginger or citrus teas.. lychee slushes is also amazing with matcha.
    I would do the wisk all the time at a tea shop I worked at but once I tried the shaker, I haven’t used a wisk since.

    Thanks! I just got my first matcha order today - plain and chocolate flavor - from Adagio today. It's late April and warm here in Kentucky, so I got out the cocktail shaker. Talk about a bright green!!! I washed out some empty tea tins to keep it fresh. I'm going to get a milk frother for my hot matcha. I think they're cheaper than a lot of the traditional whisks anyway. I've been wanting one for years anyway.

    At the tea place I frequent they use the cocktail shaker and it's definitely cooler than a milk frother

    whisking will put more air into the tea or coffee. This will definately effect the taste of a beverage. Ever heard Bond saying "shaken not stirred". Also wine is also another drink that needs air before serving! Don't shake cold-pressed juices unless you are drinking them with in 30mins or so. Air also oxidates and breaks down vitamins and enzymes.

      Although a proper vodka martini should be stirred as shaking makes it cloudy, and people prefer the aesthetics of them clear. And I doubt whether a vodka martini has much in the way of health benefits either way.

      With martinis, the shaking versus stirring is about the introduction of water to the spirit. Shaking involves ice.

    Matcha is how I start every single morning. :-) Love the stuff! A couple of months ago I purchased an electric tea kettle with a variable temperature feature so I could hone in on the correct temp for a better brew. A total game changer! :D

    The traditional whisk is really ceremonial, and a chance for tea masters to show their skills. For the rest of us, an aerolatte is probably the better choice.

    I have a cocktail idea for ice matcha, as I know that in Japan they are used to adding mint to ice brewed gyokuro, it would go with iced matcha, I think a mint liquer or even something aniseedy, like absynth or even gin would work and I would dilute it with sparkling water.

    I use room temperature water and a mason jar with a lid to shake my matcha with some honey in the water. I am able to get a very nice crema and it does have a very smooth and milky flavor. I noticed using a larger jar than necessary does produce better crema.

    Love this channel and your energy!! I read somewhere that whisking with a metal whisk destroys the catechins/antioxidants in matcha because of oxidation (the catechins begin to bind metal from the whisk instead of free radicals in our bodies). Even if the flavour is the most important thing I thought it could be good to know this!

    It is important to soak the whisk before using tp avoid breaking the prongs off, and sifting for koicha is a must, it demagnetises the tea that is why you get no lumps otherwise static electricity builds lumps in the fine powder, in a tea ceremony the tea is pre sifted in the natsume or chaire.

    Great Video. I am just getting into making my own matcha tea. Previously I lived in Düsseldorf, Massive Japanese community, so was able to go to different Japanese tea shops/Cafes and get my fix. But now I am back in UK I don't have access to these shops. So been missing it and So about time I did myself at home. So I will be trying the frother method.. Next time I visit London I hope I have enough time to visit your shop. Thanks again. PS I also love a 1st and 2nd Flush Darjeeling :)

    Don, I prepare my matcha the direct way and I don't even mix it with water. I'm using the frother, though. But I like my matcha with a powdered creamer so it is creamier and the froth even sticks on my lips so I have to lick it! Absolutely no hint of bitterness at all and ummmmnnnn....so yummy and delicious! I only wish I have your Uji Hikari Matcha!

    matcha shot - 1.5-2 tsp matcha with 40ml of 70 degree/cold water. Stir gently until no clumps, avoid bubbles
    matcha - 1/2-1 tsp matcha with 25-30ml of 70 degree/cold water. Wisk until no clumps and frothy. Add water to taste

You've definitely got one of the best tea channels on RUclips :-) I'm a bit of a Japanese tea fiend (been going through my stash of gyokuro and a lovely fukamushi sencha) but haven't explored matcha as much as I should have, considering I even took part in a tea ceremony in Kyoto... It's definitely going on the shopping list for when I've finished my current batch of tea though. It would be cool to see you guys make more videos on Japanese teas. There might be fewer types compared to say Oolongs but I've found there to be quite a lot of diversity and different flavour profiles within certain genres such as sencha, especially if you play around with the brewing parameters a bit. Oh by the way that kettle looks cool. Can you tell me the brand?

      +holuc08 Sorry we missed this comment so apologies for not replying earlier. We definitely would like to make more videos about Japanese tea and we are planning something. The kettle is something we picked up from China by Kamjove who make a lot of tea gadgets.
