@IAmSuchANerdLol I think it's a heat gun, which does get a lot hotter than a hair dryer. Still, they don't get it that hot. Just hot enough to keep it from solidifying so they can work it.
It is a heat gun they are using. It is important to keep the top part of the chocolate tempered just as it is in the bottom. When using, the gun must keep moving around. The heat gun is also important in cleaning the chocolate stains for clean up.

Acetate Roll or Acetate Tape is what the plastic sheet is called, you can find them easily online. Make sure it is food grade quality for chocolate making. The curvy plastic molding can be found online as well.
