He specifically chooses not to include that to give the drink a “fresher” taste. Just his style
There's two styles of white lady. This is the one from 1919. I prefer this one.

押し出した際に液体を奥に落とし込む。
スローで見た限りですがグラスの底まで
冷えるシェイクをされていると思います。
※飽くまで駆け出し同業者の視点です
押し出してる動作が目立ちますが手元手で細かくスナップ入れてますよ。
仕上げにグラスに注ぐ前にシェイカーをぐるっとまわして砕氷を液面に浮かばせてから注いでます。
おそらくグラスを上から撮ったらかなりフレークがあると思います。
