It’s a genuine thing people get diagnosed with by a doctor through getting a blood test. It’s not people being difficult or fussy. My immune system will literally attack my stomach if I eat ANY trace of gluten at all

I know it's a bit late since you've already finished the week on, but I wonder if non-shredded dairy free cheese would work better. Most shredded cheese (real or non) has a powder on it to keep it from clumping in the bag, which can effect the way it melts. Then again, from my lactose intolerant friends, dairy-free cheese is kind of a crapshoot when it comes to melting anyway.
With the wraps I recommend putting them in the microwave for 30 seconds or so to loosen them up I find it makes them less sticky??? Also bread should be toasted because then the texture is much more similar

Its packaged like that as it doesn't last very long when opened. So split it into 2 and open the other half when needed. It's actually quite useful. I can personally live without Gluten, but I cannot - for the life of me, live with out dairy. My doctor said I may be Lactose intolerant at the time of my coeliac discovery - I almost died inside when they said that (turned out negative though).
dont know if you checked the ingridients but some cured meats have added lactose (so not "deiry" or more like lactose free) also some ketchups have added flower and/or starch and may not be gluten free)
Should do a week on where everything you eat has to be brown. Wholemeal rice, pasta, bread, falafel, sugar, coffee, nuts, chocolate, chestnut mushrooms etc. Only exception is it has to be brown!

You can make wheat-free bread perfectly fine. The problem is these companies trying to make typically wheat-based bread wheat-free. Which I understand, seeing as most of their customers would be more accustomed to wheat-based breads, but doesn't really work without the wheat and its gluten.
I accidentally got a corn bread roll when in Poland cause I can't read polish but they're really nice, I wouldn't say they're much different just more dense. I agree with what you are saying, there are other bread alternatives out there

There is nothing to be gained by eating the stuff that tries to circumvent the gluten (meaning the food stuff that would normally contain it - other food stuff should not contain any gluten anyway, so that doesn't matter). Same thing with lactose if you are lactose tolerant. I'm not sure whether it is known yet what causes that gluten intolerance some people have, but with lactose the picture is clear: Lactose is a sugar that is only present in milk - and only baby mammals normally drink milk. Lactose consists of two sugars (galactose and glucose) linked together and can only be digested by our system if it is split in these two sugars. However, the enzyme that does that (lactase) is normally only active in young mammals (because they need it) and switched off after the individual is weaned. Hence, grown up mammals are normally lactose intolerant - if they ingest large quantities of lactose (milk, certain cheeses where the lactose wasn't broken down in the process), they can't digest it themselves, but the bacteria that naturally inhabit all of our intestines can. Pegasos 1986 I’m not lactose intolerant but from eliminating dairy and reintroducing it to my diet I discovered it was the reason I suffered with sinusitis so often so I tend to avoid fresh dairy (milk and cream) now as it sets it off!

There's celiac disease - which is quite rare - people who have that cannot eat gluten because it basically destroys their intestine, which affects other parts of the body as well. People with celiac are not fine if they "occasionally" eat something with gluten. Depending on how serious the case is, even the tiniest amounts from cross contamination - the kind you get from storing rice (which is gluten-free) in a container that was used to store couscous (which is a wheat product and contains gluten) prior to that - can result in serious issues. But people who don't have celiac disease can run into problems with wheat products, which they often falsely associate with gluten. But with these people those problems are not caused by gluten, they're caused by complex sugars called "Fermentable Oligo-, Di-, Mono-saccharides And Polyols" or "FODMAPs" for short. Long proofing times eliminate those - the yeasts in the dough eat them - but factory made bread often doesn't get the proofing time needed to get rid of all the FODMAPs, which causes digestive issues with people who are senstive to them. Switching to gluten-free bread solves issues caused by FODMAPs, because the techniques that remove the gluten also remove the FODMAPs. For that reason a lot of people with a sensitivity to FODMAPs self-diagnose as "gluten-sensitive" and buy gluten free stuff, when all they needed to do was find a decent baker that allows his doughs to proof long enough to take care of the FODMAPs.

So, when I make anything that requires flour, I use spelt flour - contains gluten, subs in at 1:1, but doesn't cause me any problems. My mother on the other hand, turned out to be gluten intolerant, when we had assumed it was wheat was the problem. How did we work this out? Spelt causes her the same problems wheat does. She's not coeliac, and if she goes out for the day, and has a sandwich, that isn't going to really bother her.. but she noticed issues when she was having toast daily for breakfast.. for example. Also, this happened when we were eating bread that she had made, so we were both eating the same food, but with different results.
Also, if the light from the window is that bad... A) Get a darker shade or put up some curtains, or B) face the window and film from the other angle. :P
I am STILL watching this. Amy's is normally thrown in the trash in the U.S. so I am curious what that brand is in the U.K. I have tried their mushy, powdery lasagna (with raisins for 'some raison') and flavorless curries, so I am interested to see if that mac & cheese holds its own. The price can't possibly match the quality, in my mind. Our version costs at least 3x as much for an inferior version of budget food - you Britts better have better taste. There's so much good food "Free from" in the world, I can't imagine why anyone needs to feel so conditioned to eating certain things that they need to buy awful, heavily processed imitations of the things, other than to impress their friends or play the victim.

Can confirm. Free-from stuff is generally up to 3x the cost. I know someone that buys 9L of milk a week for €6 (Ireland). If I, being lactose intolerant, tried to do that, it would cost me €18. Thankfully, I usually only go through 1L a week, unless I'm making something that calls for more.. but I limit those types of recipes as much as possible.

It's not really about warm or cold, these packaged tortillas need to be quickly reheated in a pan to refresh them or else they will be stodgy. You can let them cool off after that if you want to.

You need to learn how to roll a wrap properly 🤣 you are supposed to fold and tuck the bottom edge in then you can hold it upright without anything falling out.

Can confirm. Free-from stuff is generally up to 3x the cost.
I know someone that buys 9L of milk a week for €6 (Ireland). If I, being lactose intolerant, tried to do that, it would cost me €18. Thankfully, I usually only go through 1L a week, unless I'm making something that calls for more.. but I limit those types of recipes as much as possible.
