Discada Cooking | Tequila-Lime Chicken Wings

  • Today Tami is making Mexican Tequila Lime Chicken Wings on the Discada Plow Disc. We will fry up the wings in the Plow Disc, then toss them in a Tequila Lime sauce and finish with a Hatch Chile and Pablano Pepper dipping sauce.
    Recipe Ingredients
    • 1 to 1.5 lb chicken wings
    • 4 packages of Sazon seasoning
    • Badia Adobe seasoning to taste
    Wing Sauce
    • 1 Jalapeno pepper
    • 2 Hatch Chiles
    • 1 Pablano Chile
    • ¼ cup olive oil
    • 1 bunch Cilantro, chopped (approximately ½ cup)
    • 1 cup Tequila
    • 3 cloves garlic, minced
    • 1 cup orange juice
    • Lime juice from 5 limes
    • ½ cup brown sugar
    • ½ teaspoon Chile Powder
    • ½ teaspoon Kosher Salt
    • ½ teaspoon Cracked Black Pepper
    • 1/4 cup agave
    Dipping Sauce
    • Combine the remaining (1/4) Pablano, Jalapeno and Hatch chiles
    • 1 cup sour cream
    • 1 teaspoon cumin
    • 1 teaspoon smoked paprika
    • 1 teaspoon chile powder
    Recipe Instructions
    1. Season the wings with the Sazon and Adobe seasoning.
    2. Fry the wings in the plow disc over medium high heat.
    3. Drain the wings on paper towels.
    4. Add the peppers and olive oil in a food processor and puree. Set aside ¼ of the pepper mixture.
    5. Mix the wing sauce ingredients along with the pepper mixture together in a bowl.
    6. Remove the oil from the plow disc and then add the wing sauce ingredients. Simmer over medium heat approximately 10 minutes or until thickened.
    7. Toss the wings in the sauce.
    8. Combine the ¼ reserved pepper blend with the dipping sauce ingredients.
    9. Plate the wings and drizzle with the Hatch Chile and Sour Cream sauce.

    That Cenote Anejo tequila is a good sipping tequila. What a great recipe. I have to try that chili dip.

    Hatch chili’s are green chili’s that come in 3 heat levels from the hatch region of New Mexico. They can be much hotter then Pablanos. Bell Peppers can not replace them. This was a great video. We love wings.

    Great job on the wings Tammy and Jeff!! I often make grilled tequila/lime wings do will give this recipe a try!! I ALWAYS keep Adobo and Sazon seasonings on hand and use them on a regular basis...good stuff!! BTW what size plow disc is that a 22" or 24"? Thanks Jeff.

      We follow the FDA and CDC recommendation and don't wash. CDC: Stop washing your raw chicken

    Looking GOOD> Might soak the chicken in Tequila yum then season it. I never wash fish, way i fillet it and cut it you don't need to wash it or chicken, cooking will kill any thing bad > NOW CAN GOODS EWWWW i never buy can goods> Nasty nasty stuff > i buy it frozen, dehydrated, package, bottled, or fresh. i want even drink can beer ! Try it TRY A CAN BEER AND A BOTTLE BEER> BOTTLE BEER WINS HANDS DOWN same with food> Glass is recyclable as well, Plus can keep some bottles and jars as well even beer bottle . just buy some cap and a caper , make your own beer keep reusing the bottles and jars > Coronita make a nice bottle, i never throw them away can use them as a hot sauce bottles with some capers and pour inserts > Oh they now making lanterns out of them too> oil or battery power

    Under the wing sauce section you left out the Agave, and under the dipping sauce you have one teaspoon listed but doesn’t say what it is. Stay out of the Tequila when listing contents !!!😜🤪
