Boil your marinades gang is here!! Sometimes, if a marinade is a bit too strong as a sauce, I'll add stock to it while boiling. Too thin after some reducing? Maybe a little cornstarch thickening. I don't do this with EVERY marinade, but before they hit the raw meat I taste them and often just KNOW if it's going to make a bomb sauce with only minor adjustments.
