I take my time, do a lot of researching online (especially RUclips "how to" videos by the pros), and change my mind. In the end, I am always glad I did not rush into things. There is no harm in being taught, being taught 1 time and you will have that knowledge forever. I have to tell you, you son is smarter and more adorable each time I see him. He's got that little boy face rather than the baby face. I love to watch him when he's immating mom or dad, making jelly or helping with the rocks. I made jelly and jam for years and it takes time and time until you get the recipe just the way you want it. each reciep can be made by many people and it will turn out differen. Yours today made my mouth water because it looks spot on but if it's not exactly what you wanted try again and and you will have the perect recipe. We are also in the middle of processing the green beans, tomatoes, cucumbers and some of the beetroots we have grown. And was just talking with my husband about your outdoor kitchen which I think is super practical for this kind of work when your notification pinged! My husband and I built our house. We did all the work ourselves. Unusual for the US. After 2 years, we had it where we could move in, but it was a long way from being complete. We made lots of changes too as we did this building, and at times could not do much as we saved money. We found lots of old building books that we referred to often. A few things we had to redo a few times. It was a wonderful experience to build our home. The slowness of building a home yourselves gives you the time to really think about the details you want and need in your home. Like the floor cellar in the kitchen. Love your videos.
Little tip for you,... To avoid the glass jar from cracking, don't use that tray or stainless steel countertop. Put a teatowel, or even newspaper under them. That jam looks absolutely gorgeous!
If you check for any nail holes and fill them in with that spray foam before you attached the tin to the roof, should give you a dry roof and still do a good job for you.

Matias, I live on six acres in South west Pennsylvania. The land has been compromised, and contaminated. We have several invasive species of plants that prohibit the growth of native plants. I’m doing my best to clear and introduce good plants, bacteria, etc. Also the opening to this video was impressive! Award winning!
Thank you! Yes, the invasive plants problem is a hard one. Management is key I would say. I highly recommend the book Holistic Management by Allan Savory. You won't get an answer on how exactly you should do, rather a guidance on how one can think.
Tova your jam looks lovely! Have a look online about why you shouldn't turn jars upside down. It can create a false seal. Also some jar lids have plastic which isn't safe. If you put your hot jam in hot sterile jars with the right amount of sugar it will last years and seal well. You can use vinegar to clean the rim of the jars to help make a solid seal. Enjoy it!
Homemade pickles are probably healthier since they don't have sodium benzoate. I just recently found out sodium benzoate changes to benzene (a carcinogen) when consumed with vitamin C. Ginger ale has sodium benzoate as well. Where was the FDA on that one?
The Cellar under the house is a GREAT idea! Yes, no hurry to finish the larger house. You already have a sweet cabin that works fine for your family. Take your time, and make it what you will love for the rest of your lives :-)
Something else you might like to try with excess cucumbers is "cucumber lemonaide". It is soooo refreshing and very nourishing, too.😋 I love fermented pickles and also make relish with mine, too. I learned to keep the jars from cracking, keep the jars in a pot of hot water and empty each just before filling.. It's the temp difference cracking them. 😉

My wood stove survived the fire. Nothing in the basement was touched until the water and stuff the fire department sprayed all settled down but my nephew brought out my stove which is just too big to fit in the camper MEANING I can’t stay here year round. So I’m thinking to build a little something and attach it to the camper and have my stove in it to heat all of it. Everyone thinks I’m nuts 😄 asking how I can live in such a small place but♥️ the solitude of it and waking up in my little woods spot every morning is just wonderful. I’ve been here 40 years - I’m happy here and don’t want to be anyplace else Cucumbers- I make mustard pickles … it’s cucumber, onions and I add cauliflower bits too if it’s a good growing year for it - then you make a mustard sauce and my children would take a bowl of just the pickles and eat it with a spoon 😄 I’ve used the same sauce for cabbage shredded up with a little onion, add red chopped peppers for colour ( carrots shredded is good too ) but that mustard sauce is delicious - enjoyed your video as always. Was that your root cellar that is close to that over flowed stream? 🙏 for you all to have a safe and bountiful harvest. ( are there bears where you’re living ?) 😳
For pectin one can use apples juice it contain a lot of pectin. or you can make your own pectin that way just using the juice of the apples. just keep that in mind for later on. Your son getting so big I have watched him from birth to now great son you two have there. I love your video's.

Tova, I make jam the same way no matter what fruit I use….6 cups of fruit….low boil steady for 25”……then add 2 cups of sugar, steady boil for another 25”. It always turns out. I have found that blueberry’s seem to have a lot of pectin & always seems firmer to me.
The sheep had full bellies! The blueberry jam looked delicious. We have wild huckleberries here in North Idaho. They are sure a prized and sought after berry. We had a large crop this year. The opening photography and editing of the video was so well done. Excellent. See you on the next one!

The flower is called Tansy here in the US. Wikipedia says the leaves and flowers are toxic if consumed in large quantities; the volatile oil contains toxic compounds including thujone, which can cause convulsions and liver and brain damage. Lots of things to read from it there. The Jam looked wonderful, it would be great on toast :)
All plants are toxic in the right amount. No ruminant animal will fare well on a monoculture. Some plants are more toxic than others though, I would not let my flock into a field with only tansy.
One can do anything he or she puts their mind to do - if they really want to do it and if they're really interested in doing it. For instance, have you always known how to create videos? Did you always know how to build a cellar? Have you always known how to care for animals? Have you always known about regenerative practices? Have you always know how to raise a child? These are things you learned how to do, because you wanted to and because you had a great interest in doing them and doing them well. You took the time to learn from others and to make mistakes along the way. Mistakes can be our best teachers. Even when one is not confident, one can move forward and do the thing anyway -- if he or she is determined to get it done.
I think all the hard work and unfinished projects are taking a toll on your wife. In my Home countries you cannot make a living on Hobby farms. Although a Life Style you might consider a steady income next to Farming reasonable to Support the Family and finish on the House. Nonetheless beautifully filmed.

You can immerse them in hot water first, before you put the hot jam into them. It is called "tempering" the glass and will keep them from breaking when the hot liquid is added to them. You are so patient with your projects and with your son! I am so touched by your kindness and feel a calm when I watch you. I am happy to hear that the jam turned out tasting well. Your daily meals remind me of when I camped with my family as a child. We ate pretty much the same way. It was a good time, as long as the weather was nice! LOL!! You use a horseradish leaf, my mother used a grape leaf. I always thought it was for decoration. I did not realize it was serving a purpose of keeping it in the brine, and it was always a question of mine, that I could never have an answer for.
My mother taught to put a metal spoon in the jar you are putting hot liquid in and that helps to keep it from cracking. And that apples have a lot of pectin. So if you slice up an apple and cook with your jam you don't need to add as much gelatin.

I have always just used sugar & some lemon juice the jam is a bit runny but yummy
Whenever my jam comes out runny, I just change the label to say “syrup”. Then, I use it on ice cream and pancakes! No problem!

Did you guys mill your own boards for your floor where the battery was hooked up? I’d give anything for that floor. 👍. I’m starting over really - I’m on my homestead most of the year- lost my house to fire 😢 so me and my dog stay in a very small camper to tend my gardens. My wood stove survived the fire. Nothing in the basement was touched until the water and stuff the fire department sprayed all settled down but my nephew brought out my stove which is just too big to fit in the camper MEANING I can’t stay here year round. So I’m thinking to build a little something and attach it to the camper and have my stove in it to heat all of it. Everyone thinks I’m nuts 😄 asking how I can live in such a small place but♥️ the solitude of it and waking up in my little woods spot every morning is just wonderful. I’ve been here 40 years - I’m happy here and don’t want to be anyplace else
Cucumbers- I make mustard pickles … it’s cucumber, onions and I add cauliflower bits too if it’s a good growing year for it - then you make a mustard sauce and my children would take a bowl of just the pickles and eat it with a spoon 😄 I’ve used the same sauce for cabbage shredded up with a little onion, add red chopped peppers for colour ( carrots shredded is good too ) but that mustard sauce is delicious - enjoyed your video as always. Was that your root cellar that is close to that over flowed stream? 🙏 for you all to have a safe and bountiful harvest. ( are there bears where you’re living ?) 😳
I, too, am planning to build a small secret cellar in my pantry floor. I will be interested to see how you insulate yours to prevent freezing.
For pectin one can use apples juice it contain a lot of pectin. or you can make your own pectin that way just using the juice of the apples. just keep that in mind for later on. Your son getting so big I have watched him from birth to now great son you two have there. I love your video's.

Tansy? That’s what it looks like. You can mix apples, which have lots of pectin, with your blueberries to make jam.
Tova, I make jam the same way no matter what fruit I use….6 cups of fruit….low boil steady for 25”……then add 2 cups of sugar, steady boil for another 25”. It always turns out. I have found that blueberry’s seem to have a lot of pectin & always seems firmer to me.

The sheep had full bellies! The blueberry jam looked delicious. We have wild huckleberries here in North Idaho. They are sure a prized and sought after berry. We had a large crop this year. The opening photography and editing of the video was so well done. Excellent. See you on the next one!

Pectin will give you a better product than gelatin. Pectin tends to make the fruit stick together rather than creating a mass like gelatin.

The flower is called Tansy here in the US. Wikipedia says the leaves and flowers are toxic if consumed in large quantities; the volatile oil contains toxic compounds including thujone, which can cause convulsions and liver and brain damage. Lots of things to read from it there. The Jam looked wonderful, it would be great on toast :)
All plants are toxic in the right amount. No ruminant animal will fare well on a monoculture. Some plants are more toxic than others though, I would not let my flock into a field with only tansy.

One can do anything he or she puts their mind to do - if they really want to do it and if they're really interested in doing it. For instance, have you always known how to create videos? Did you always know how to build a cellar? Have you always known how to care for animals? Have you always known about regenerative practices? Have you always know how to raise a child? These are things you learned how to do, because you wanted to and because you had a great interest in doing them and doing them well. You took the time to learn from others and to make mistakes along the way. Mistakes can be our best teachers. Even when one is not confident, one can move forward and do the thing anyway -- if he or she is determined to get it done.
I think all the hard work and unfinished projects are taking a toll on your wife. In my Home countries you cannot make a living on Hobby farms. Although a Life Style you might consider a steady income next to Farming reasonable to Support the Family and finish on the House. Nonetheless beautifully filmed.

And Tova, I love your willingness to try new things. When you are putting a very hot liquid into glass jars, it is important to have the jars hot as well. You can immerse them in hot water first, before you put the hot jam into them. It is called "tempering" the glass and will keep them from breaking when the hot liquid is added to them. You are so patient with your projects and with your son! I am so touched by your kindness and feel a calm when I watch you. I am happy to hear that the jam turned out tasting well. Your daily meals remind me of when I camped with my family as a child. We ate pretty much the same way. It was a good time, as long as the weather was nice! LOL!! I am surprised you have not seen ladybugs in years. While we don't have as MANY as we did long ago, they are still around. I also got a kick out of seeing a grown man playing in BS. Ha! Although I know your interest in it is more scientific than just playing. So surprising to see all that water after the thunderstorm, and ending so very close to the house! I would be afraid of it being flooded in the future, if you get repeat storms like that. Fingers crossed! (Glad to hear the cellar stayed dry. Tansy belongs to the rose family and seems to help with cramplike illnesses (e.g. menstrual), bleeding, inflammation (above all of the oral mucosa and the gums), etc. As someone else pointed out, one should know in which concentration and how to use it.
I went to Sweden this summer with my daughter, granddaughter, grandson. We celebrated mid Sommer in Delarna. I'm 3rd generation Sweden. My grandmother and her parents migrated to US in 1900. I loved Sweden and felt at home. I would love to die there. I'm 74. I climbed to the top of an abandoned ski lift. Climbed in a national park. My heart was full. I'm grateful for your videos.

Looks more of a jelly than a jam. Probably still delicious! I made a pear jam last week, it only made three jars, two for my youngest son and I and one for his older brother and wife for a housewarming gift! They bought their first house and are moving in on Saturday.

True Lady Bugs are red - like red on the color wheel. There is an imposter from China that is more of an orange - red. I very seldom see Lady Bugs either. I love your videos, the progress you are making and watching Ivar grow. My grandson is just 2 1/4 months older. They are so different. Ivar has knowledge that most kids don't learn.

My mother taught to put a metal spoon in the jar you are putting hot liquid in and that helps to keep it from cracking. And that apples have a lot of pectin. So if you slice up an apple and cook with your jam you don't need to add as much gelatin.
Your ancestors would have guided you wisely. All that knowledge now gone. Try and meditate on it and see what comes through.
