Hi, first time watching you. The mangoes are actually green mangoes, meaning they are unripe. The paste that came with it is Bagoong (shrimp paste) which is very salty. But it balances the sourness of the mangoes. Bagoong is an acquired taste though, so most foreigners don't really appreciate it. But we Filipinos love it. We also put it in Kare-kare which is one of our popular dishes here. :)
Gladys, I like that version of the pan de sal because it’s sweeter because of the moringa leaves blended into the dough..contrary to the slightly saltier original version.
