      Here in Canada, we have honest to god maple syrup reserves. There was a big thing in the news where somebody somehow stole (and sold) millions of dollars of maple syrup before this was found out about. Most syrup you buy at the store is just sugar water with maple flavouring. The real stuff costs like $30 a bottle. It's not cheap.     "Welfare Cheese" was a big cultural thing for many working class Americans in the past including my mom growing up. There's even recipes specifically centered around it.

      Government cheese was some great stuff! I only had it for a couple of years when my dad landed on a good union job. For the cheese snobs, cheese from Uncle Sam was designed for cooking with other dishes which meant heating it to melt that gave its distinctive great taste, not to be eaten by itself.

    I ate lots of Government Cheese as a kid. I even remember that box. It actually made pretty good grilled cheese sandwiches. As a young kid it actually tasted good throw between two slices of bread with some tangy Miracle Whip and was good. It was for a short amount of time we got this cheese but with a loaf of bread and the electric bill paid those grilled cheese sandwiches helped the family out a lot.
    I guess you needed Butter/Margarine to fry it up also.

      I too made a lot of great grilled cheese sandwiches with that exact cheese. The simple labels on the box.
      It did taste good to me. Been 30 years since I have had any of that government cheese. I would love to have a block of it just to have a taste of Nostalgia.

    Growing up as a teenager in the Reagan years, I remember the "Government Cheese" even if my family never qualified or had need of the help. BUT senior citizens *did* qualify to receive the cheese mostly regardless of whether or not they needed it (based on income). Here is where my Grandma living in Dolton, IL (So. border town w/ Chicago; a working-class town) surprised us and reminded us of what a good neighbor was. Grandma was not wealthy but lived in the same house she had since 1943. A Widow since '83 when Grandpa had passed, and in her 70's when Reagan took office, Grandma remembered always what it was like living and raising 3 children through the depression, when she had known hunger but did her best to make sure her kids did not. When she found out that she qualified for the surplus (iirc) 5lb heavy-foiled blocks of cheese, but that her neighbor next door who was a single, working mother of two young daughters DID NOT QUALIFY(!)...she queued up at the Dolton Firehouse just behind her alley (and a short walk), to get her cheese. In that line Grandma found many of her own peers; decently provided for working-class/middle-class retired Seniors who were lining up to "Get their cheese"---not for themselves, but for others. My Gram's neighbor had remarked that the "Government Cheese" was her Daughters' favorite for making grilled cheese---it tasted the best! ------ The U.S. Government has my ongoing, blanket support for buying & stockpiling all the &^%$#@ cheese it wants to!

    holy shit i can’t believe it. my grandfather was a semi truck driver and, being from wisconsin, he delivered primarily large amounts of cheese. i used to ride with him on his trips sometimes and thats what leads me to say…. IVE BEEN INSIDE OF THAT CAVE. My grandpa and i used to kick rocks down some of the tunnels. the place is crazy huge inside and very cold and dark. never thought i’d see a picture from inside there in a youtube video. cheers

    Actually, regarding the last point about "... a lot of it going to waste...", not as much as you'd think. When a wheel of govt. cheese is close to going off (which takes a lot longer thanks to the extra processing in its manufacture and the storage conditions in the underground vaults that are ideal for cheese longevity), the wheel is taken off the shelf and combined with thousands of other similarly close-to-expiration cheese wheels. They're all melted down together, repasteurized, and sold on the open market through corporations like Kraft as "Processed American Cheese Food Product". Yes, those familiar individually wrapped slices of generic yellow stuff every American has put on their kid's bologna sandwiches and cook-out burgers since time immemorial are actually the recycled excess from the Government Cheese Vaults. That also explains the taste; it's the result of dozens of different varieties of cheese all being melted down and mixed together, because when you've got tons of close-to-expiring cheese to get rid of, you can't necessarily wait to separate them by type and taste, you just throw them all in the industrial fondue pot. The end result is a generic cheese that tastes... eh, good enough.

    Never knew about the stockpile, but I remember eating government cheese in the 80's. It tasted and looked like Velveeta, which isn't actually cheese but a vegetable protein product, so I always assumed that is what government cheese really was. Strangely, I got a lot of government rations growing up because my parents pulled them from dumpsters after the "people in need" took the canned ham from the box and tossed the rest (not faulting my parents, I'd do the same to this day because I'm cheap).

    Mid 1970’s, temporarily out of work, I wanted some government cheese.
    I went to the government cheese place.
    I filled out some forms, stood in line to receive my cheese.
    The lady behind the desk told me I didn’t qualify because, owning my home, I did not pay rent or a mortgage payment, even though I was out of work.
    I asked, “Are you telling me ‘that’s not-cho cheese?’” (Nacho Cheese Doritos were a new thing then.)
    She laughed at that, said she wasn’t supposed to do it but handed me a brick of cheese anyway.
    I liked that cheese. I’d buy some today if I could.

      My grandpa did that with a stillborn calf too... cut it in pieces inside and the cow survived & had more babies. He was born in 1900 died 1980. Knew everything..self educated. Saved a village from Nazis in WW2 by blowing up a bridge using homemade explosive (no idea what, but it worked). Ppl used to know all sorts of things.. they had to. Especially in times when average lifespan was only about 30-40 years. I'm still amazed how they managed to know so much in such a short life. We're getting progressively dumber with bestest tech humanity invented.

    My kids and I lived on government cheese, milk powder, and actually ham too. We got it for a whole year, and we loved it. I was so thankful to have it! But I never knew until now the whole story behind it.

    I’m pretty sure “Guvment Cheese” is still around for those wondering. It’s usually given through food aid programs in many states. By itself, It’s not really incredible taste wise, but if used to make Mac n’ Cheese or other cheese dishes, it’s high milk content make it really creamy and smooth. My grandmother used to seek it out and buy it from some of the poorer families in her neighborhood in order to use it in various dishes. She would usually the. Bring them back a massive bowl of whatever she made as well as purchasing the cheese from them outright. I would compare it to something like the bricks of Velveeta cheese, as it wasn’t hard cheese like cheddar it was usually in the “American cheese” style at least that’s how I always saw it.

      I’ve been going to my local food pantry for the last couple of years and sadly we don’t get any government cheese. 😢 I’m in So. Cal. It would be perfect to use in my vegetarian Italian stuffed bell peppers! I’ve used cheddar before but it doesn’t really melt well in the rice mixture. The Kraft jar cheese works great, but all the unpronounceable ingredients in it freak me out too much, so I stick with the cheddar.

      @@pinkpugginz its packaged very similar to Velveeta but its a little different. Velveeta is a Processed Cheese Product where government cheese is a little higher quality. It's got more of a hard cheese smell like a cheddar but melts like American because of its high milk content. But Velveeta is about as close a comparison as can be found outside of a food bank or food pantry program. LMAO a good way to market would be "Velveeta Private Reserve"

      There's a lot of stuff under your feet. Miles and miles of underground limestone quarries now serve as long term storage for documents, data, cheese, other foodstuffs, etc.

    Cheese fun fact: British monarchs are the biggest fans of Cheddar cheese. King Henry II bought over 10,000, King Charles I preordered many wheels in the 1700s, and in 1840, Queen Victoria received a massive over a half-ton wheel as a wedding gift! A group of farmers from Somerset combined the milk of 750 cows to make a giant Cheddar wheel weighing a barely believable 11 hundredweight. Even Queen Victoria, famed for her hearty appetite, was reputedly unable to finish this enormous offering
    Been in love with cheese ever since I grew up in Switzerland. And I can't blame the Americans either.

    I remember when they were freely giving away blocks of cheese, some people would get them and give them to my family, we had five boys my mum and dad. We wound up eating a lot of grilled cheeses sandwiches and macaroni and cheese. We weren't poor, but weren't well off either.

    The Gov't Cheese program actually had regional variations. In places with a cheese industry, dairy plants could send cheese directly to locals and cut out the transport and storage entirely. Which is how I grew up on Cabot Extra Sharp Cheddar in 5lb blocks for free, delivered weekly.

    My grandma got government benefits and I remember eating government cheese, bread, and, I believe, peanut butter. I was not very fun to visit her, at least as far as food went.

    Durring covid part of my old job as a facility manager for an apartment complex was to give out boxes of government food, they included, 2 pounds of cheese, I gallon of milk or yogurt, 2 12 packs of hotdogs and a loaf of bread. A perk of this job was every week I go a box to take home, I had so much dairy in my fridge I had no space for it at the end of the month

    Back in the 90's.
    I would pick up 40+K pounds of butter from Nabisco in Denison, TX.
    I took the butter to the Caves, north of Kansas City.
    It's quite an experience to drive a stretch Peterbilt with a 53' trailer.

    I live in Springfield, MO and have worked as a temporary worker in the Springfield Underground in the past. The cave complex is quite enormous in its size so big that trains drive through its many entrances and out another. The cheese operation is only one government presence down there. There are also secret computer and networking systems, cryogenic storage, science laboratories, and at one time was used for stockpiling that "other" government thing you referred to, nuclear weapons.

    You have helped me to explain a lifelong mystery, and I am 72 years old. I can remember when for decades when you bought a hamburger at a hamburger stand, that you had to special order cheese (yechh no one did that) on your burger. In fact, I can remember when you couldn;t even GET cheese on your hamburger. Then, all of a sudden, you couldn't get a hamburger WITHOUT cheese on it. You had to special order a burger without cheese. And even now, you can't even get a burger WITHOUT cheese on it at some hamburger places. 🤣

      It always irks my hide how much restaurants charge for toppings. Like you said - an extra buck for a slice of cheese is insane. Or $1.50 for a 1/4 of an avocado. It pisses me off how greedy they are.

      I delivered to restaurants for years and learned a few things. Love the cheese dip at Mexican restaurants? ? Go to the deli at your local store and get a block of white American. Cut some chunks off and put it in a ramiken. Slightly melt it in a microwave and then add a little milk then stir. Keep adding a little milk, heating and stirring untill the correct consistency. Add jalapeño to taste. Exactly what they do except they don't use a microwave. Every one I delivered to used "Extra Melt" white American cheese.

    Much inventory was lost, it caused a _sharp_ increase in prices. The insurance company had to fork over a lot of _Cheddar._ At first, investigators didn't know _Jack_ but with some _Gouda_ detective work they traced the perpetrator to _Philadelphia._ They knew a Swiss had something to do with it, their alibi was _full of holes_

    I once worked as a volunteer with poor families. To get your cheese, and benefits, there is a lot of PAPERWORK you have to get through. Which for poor people with poor educations, or little English, is why they need help. Well, it's not just CHEESE. One time stopping to drop off some papers, the government was giving out CHICKENS (dead ones). Whole chickens. Which not everyone had the facilities to cook, or even knew how to cook. The nice Puerto Ricans in the area, made huge pats of the best chicken and rice (people donate rice a lot to charity kitchens as it's fairly cheap). The volunteers bought the spices, and everyone ate well. But you never know what the government is going to give out.

    They stopped giving cheese in my neck of the woods probably about thirty years ago now. I have no clue which, if any, states get it. I've never heard anyone say they dislike it and in fact it's quite the opposite as nearly all who've had it remember it fondly like a cherished moment wistfully pulled from memories of yesteryear...sigh.....

    Having had my fair share of that free cheese in my younger days (my kids and I ate a lot of grilled cheese sandwiches) I can say it wasn't all that bad. A bit on the salty side but overall it made for a good sandwich or cheese sauce base.

    I definitely remember in the 1970's when I was a kid, we got free huge blocks of government cheese and it was GOOD cheese. We made cheese sandwiches all the time, grilled cheese sandwiches, cheese quesadilllas, and all kinds of other things that were so good. That cheese was high quality.
    We also got free powdered milk, canned meats, and government blocks of butter. It was all very good. We were quite poor so we got resupply of this stuff every month and we loved it. It sure saved my mother from having to worry so much about where our next meal was coming from. So this government cheese give away along with the other foods was a good thing. 😃

      @@waynek3366 My mother received Food Stamps, but it wasn't much, especially when she was trying to feed five children.
      The Food Stamp program began in 1939 and had expanded and become permanent in 1964. So in the late 1960's and early 1970's when I was a kid, the FS program was something that helped and was meant as a supplement to the low income of families. The government cheese and dairy foods giveaway was something that was part of the Food Stamp program. It definitely helped us. I've run onto a lot of people like your family and mine who got the cheese and other food products and it is something that I remember fondly. 😊

      My mom and I and siblings moved to California in 1972 that was the first time we reserved food assistance, I don't remember mom getting food stamps but we did get a food package of commodities and the government cheese was included and mom would make the best Mac and cheese.
      That was some rough times but mom made it work.

    I remember free government cheese when I was a kid in the '70s. Our fridge seem to never run out of cheese or butter. I would snag a couple 10 cent Coca-Cola bottles from behind the grocery store. Cash them in and buy a loaf of bread. Go home and make grilled cheese sandwiches.

    I’ve been inside the Springfield Underground a few times, I’ve even seen inside one of the cheese vaults, never thought anything of it until I saw this since there are Kraft and Highland Dairy plants in the same town. Interesting.

    I'm old enough to remember as a kid how my family grew up real poor. Not homeless but definitely did some dumpster diving before it became a thing. So the church would give out government food including giant blocks of yet to be sliced American cheese wrapped in clear plastic with no kind of logo at all. Like something from the "No-Frills" section of the supermarket. My favorite government food was canned beef. Had a white label with minimal print and no logo. As a kid I'd open up a can and fry it in a pan. No seasoning or anything but it had some fat that gave it some taste. Sometimes I would use to fulfill an otherwise "wish" sandwich: two bread slices with a slice of cheese and/or ketchup cuz I wished for some meat.

    I was a kid during this time and I remember the cheese blocks they gave away. One correction though, you didn't have to be on welfare or anything, anyone could go get it.
    The cheese was incredibly good, everyone loved the stuff and as word got around, everyone was trying to get some of it. To this day, I'd buy that cheese if they would sell it to the public, but I don't know how they distribute it now. The stuff was awesome.

    There was a similar program in place that supplied fallout shelters across the US with survival kits. During the Cold War, with the threat of nuclear war hanging over their heads, thousands of fallout shelters were built, either privately or in public facilities in what was called the Community Fallout Shelter program. Stocking those shelters came with several independent kits;
    Light colored, fiberboard barrels are 'Sanitation Kits'. Each contained, a commode seat, commode chemical pack, bag liners, toilet paper, hand cleaner, plastic gloves, water spout, napkins, paper cups, can opener, and twist ties.
    Rectangular metal cans were called 'Cracker Rations'. They had not just crackers but also bulgar wafers, and carbohydrate supplement hard candies.
    A third set was a metal, 17.5 gallon water barrels with extra plastic liners serving as water buffalos.
    The combination of kits was to supply a group of people a quart of water and 700 calories a day, the minimum for survival, for two weeks. There were other boxes created; radiation detection kit, medical kit, and a ventilation kit.
    Such kits can be clearly see in the 1978 film 'Dawn of the Dead' when the survivors enter the mall for the first time.

    My brother-in-law used to be a fireman in a bad section of town, here in a big city on the East Coast. He would have people coming into the firehouse all the time selling their free 5 lb blocks of cheddar for a buck. We had our fair share of it, and I remember it being pretty damn good. We even had to buy a slicer.

      Any basement or cellar can easily be converted into a cheese cave. And cheesemakin is honestly a rly fun hobby that is mostly waitin and doin other things heh. A lot like brewin alcohol actually, as both need plenty of time to age for some of the best quality.
      Compared to brewin tho its much easier to get into cheesemakin bcuz its prty much just do all the work on day one and then wait for the cheese to age properly. Whereas most alcohol brewin takes multiple separate days of decreasin amounts of work.

    I'm consistently embarrassed by how much more this kid in Ireland knows about my country than I do.
    In the 80s, when I was newly married and poor, we did avail ourselves of the government cheese (and yes, everyone really did call it that). It wasn't the tastiest thing; it was more like a really cheap Velveeta (it even came in the same size and shape packaging, as the video shows). But we were poor and it was food, so we goddam well ate it. I just never knew the story behind it. Thanks, kid in Ireland.

    My mom worked for a clinic that served poor people in the 80's and they distributed this cheese from the Department of Agriculture. They had so much that the nurses took the surplus home rather than letting them spoil. (They dropped off the cheese, but there were no refrigerators for it.) It was pretty good, but drier than typical American cheese. That box lasted a long time, too.

    (3:37) Yes. THIS is what it looks like. Somehow in the 90s I came into possession of one of these lovely rectangular blocks of U.S. government cheese. When I finally got the courage to open it and try it... Well... Let's just say you aren't missing anything. In fact, never EVER think that poor people are getting something actually good tasting. I imagine that being in a starving condition just might help its palatability, though. They say that a drowning man will grab the edge of a sword. To that I say that a starving man will eat a block of government cheese. Make of that what you will. 😉
    EDIT: I must add that I am a bit of a cheese snob. I know there are people out there who have fond memories of all kinds of heavily processed food. To them I say, by all means, don't let me stop you from enjoying it. 😉

      The gov cheese we had didn't melt. Ever. 20 min in the microwave and nothing

      Naw youre right, that cheese was not good.
      It was unsalted, unflavoured, and made with one goal in mind; to preserve the milk as fast as possible and as cheaply as possible.
      Ofc that means the cheese quality is gonna be wretched.
      Tho if you cud get the cheese to melt and added some seasonings to it then yea, it cud be made palatable. Actually, thats why folks generally say they like grilled cheese with govt cheese; bcuz the bulk of the flavour there is actually from the tomato soup ofc that you dip the grilled cheese in.
      And yeah, as the other commenter suggested... Sometimes it just wudnt melt. Theres a lot of reasons behind this, but if ya got one like that... Rly the only good use for it was grilled cheese. It wud at least cook into the bread a little and while not rly melted, it wud become more palatable that way as opposed to raw and uncooked or cooked open faced where it wud just burn.

      I have it in my fridge now. It's not any worse than the cheese McDonald's uses in their burgers. It's food. Go through a war and you learn to appreciate sustenance.

    I had a 1 inch cube of government cheese when I was little, at a friend's house. It wasn't cheese, it was "cheese, I guess." 7/10.

    They gave it to schools too. I got to eat in the 80s as a kid. It didn't taste too bad. :)

    I ate some of that cheese as a kid. I remember that packaging you showed. I was very young, but I do remember waiting in a long line inside what looked like a grocery store without shelves but with food all over long tables. And we got this and gray cardboard cans of peanut butter and similar. A food bank, I presume in hindsight.
