I went to make my very favorite Lemon Curd with eggs and realized I didn't have enough eggs. I remember watching this video awhile ago. So I thought I'd give it try and made this today. I have to inform you, I actually like it better than the recipe I have with eggs, it is divine, thank you for sharing.

It gives me 2 ideas (that I haven’t tested yet) : - what if you stop just before adding butter, and you gentle add whipped cream instead ? Kind of a cream « mousseline » - what if you let it evaporate a little bit longer, until it becomes a paste ? That would be a milky loukoum ; and then a bit of butter… that would be an insert in an entremets Please, please don’t get me wrong ! I’m not saying that my ideas are better ! I’m saying that recipe got me daydreaming…

I just watched this and your other lemon curd video and have a question. What does the sugar add to the recipe? Is there a certain chemical reaction that helps the curd set? Or is it strictly for flavor? What happens if you make a sugar-free lemon curd? Is it super potent and flavorful?

Good question! It's pretty lemony as is, so I probably wouldn't recommend adding more lemon flavour, maybe just omit the vanilla if you prefer not to use it :)

Such an easy and delicious recipe. Takes only 20min to make it. Reduced sugar by half and the recipe still worked out well. Thank you!!
