Great recipe. My neighbor gave me a Kabocha and I had no idea what to do with it. I am all over it now. Got to get the shrimp paste and the Chinese Green beans from from the local international store.
Hi Janelle. My daughter is hungry for pork w/pumpkin squash so I looked for a recipe here on YT as here you are! I remember buying this squash in Hawaii for around $10. or so. I'm glad I found it here in Utah for half the price. Also, I love how you kept the skin on the pumpkin. I'll let you know how it turns out. Thank you!
Good question - I think it would taste completely different, but would still make a delicious dish. I think fermented soybeans have a milder saltiness to it, whereas shrimp paste is sharper and stronger. It would be a way different dish, but I'm visualizing how it would taste in my head - and I think it really would taste good!
WOW Sorry I didn't see this until now, I am so sorry! Yes I left the skin because it is so tough to peel while raw, and if it's simmered long enough, it becomes soft. It adds a nice texture to the dish!
