Making the tutorials in creative is much more efficient for time! That’s the only reason I don’t do them in survival, just to make the video shorter :)

Note blocks make good decorations, too. I use those in my village, instead of barrels.

I don’t have anything like that in mind but as long as you can find some sort of flat surface just ordinary fencing should work!
