    Wonderful information and super recipe, Jenn! I agree 100% on authentic taste for authentic-tasting Kimchi! I was stationed in South Korea in the 1990s and nobody who lived there seemed to dislike garlic - I swear it was in EVERYTHING except desserts. This is one recipe that would not do to substitute elephant garlic - it's not strong enough to uphold the complexity of flavor. But oh to have an Asian market closeby! I'm making my list for a day's excursion and almost forgot the glutenous rice flour (for shame! - LOL) so your timing is impeccible! Thank you!

      I have seen a lot of recipes for kimchi done various ways. I think that's fine, but for myself I want ALLLLLL the ingredients lol. I wouldn't use elephant garlic either, like you said it NEEDS to be strong. Korean food is my favorite so I try and do it justice when I make it by keeping it authentic as possible. A lot of ingredients you can find online now. The only two things I really had to get in person was the Korean radish and the salted shrimp. H-mart will even ship those types of things in certain areas. Might be worth seeing if you are in one.

    Great video Jennifer, love the absolute start to finish and transparent look at handling cabbage coming from the garden! The kimchi looks wonderful, and appreciate you sharing the process and recipe. 💚

      Thank you! I know its a slightly longer video but I thought it would be wrong to leave out the truth of what you might find from your garden lol.

      @@letssummondinner I remember hearing that statement about it being safe and delicious if the bugs liked it from a Japanese friend of the family years ago. They said our grocery store produce department looked hazardous because few of the fruits or vegetables had bug-bite marks on them, so she decided to plant a garden. :)

      @@OrganicMommaGA I seriously cringe when I see people in videos toss whole tomatoes because of one tiny bite mark, or who cabbages because a few leaves got chewed up. I put in TOO much work to do that lol. If the bugs are eating it, I know its gonna be good lol. 😂

    I used to think kimchi was too spicy n hot for me. Then after reading d many benefits it offers l tried some. Now l make kimchi n eat it every day

      Don't forget there are a bajillion varieties of kimchi. From green onion to white kimchi... even radish kimchi. All are SO good and good for you.
