Scallion Pancakes Worth Waiting 3 Hours For

- Опубликовано: 30 июн 2020
- Scallion pancakes, or congyoubing, are a common breakfast item in Shanghai. Crispy on the outside and tender on the inside, they can be found in snack shops all over the city. And this particular store is so popular that people sometimes wait three hours just for a pancake.

I pray that someone will come along that has a passion for this and be his apprentice. Man or woman, it doesn't matter. It's obvious that there is something special there, to be preserved, honored and celebrated. Thank you for sharing this hardworking mans story with us.
Many old Chinese shops are like that, no matter men or women. They only stick to their industry.
i think he's just steadfast. there is no secret to slowcooking. cooking slow is the best way to keep moisture, cook evenly and not char anything.
i slow cook my chicken all the time :). secret to food is low temp and animal fat (he uses lard). but sometimes the best products are not the most profitable.
Ask Gordon Ramsay, he will
It wont be easy u know like its a tough and a very little rewarding job like when you are young working to make pancakes would not really cross their mind like of course his kid dont want to learn to make pancakes looking at his dad like that with almost no room for fun or break with little reward from the business like yeah its tough......
@@zohoro96 i bet Gorson Ramsay will still learn it. Even though its just for a while.
阿大葱油饼 a true legend. I lived near in the neighborhood super close to his food stall (glad he opened a large store) in my first 18 years, and his 葱油饼 is so good that I had it at least twice a month. No wonder he’s now famed, his recipe never changed before and after food channels started reporting his business.
It’s a sad reality that it’s so intense and is not considered a great job, thus not everyone’s into this pancake balking. I truly miss his pancake and his insistence on quality, which I found scarce these days.
He worked so hard and he’s so proud of it, it makes me sad looking at his poor back. What a strong will, it takes a lot of discipline to work so much, his brand name is truly created through his own sweat tears and blood.
@Captain Kirk Sure id like to see you try to make 300 a day
@Captain Kirk You know that age affects his body and it hit him hard look at his fucking back it aint easy for him as it is easy for you
@@nowtmrb3337 he's a troll. He prob can't even boil water.
Sup Vincent, I'm Vincent from Vietnam
@Captain Kirk captain what the hell what are you doing here you old groof your surpose to control the ship
Fun fact: If you can speak Chinese, you will find he speaks in a quite swaggy style.
How much a person's personality do we miss when we don't know their language? What a fantastic discussion. Thank you for sharing this comment!! You've got me thinking about it. We see him as a dedicated, sad old man cooking. When in reality, that's not all that defines him. But most people won't know that because they can't understand all the verbal and non verbal queues.
you can kind of tell by the way he says "i ate too much" at the end
as a chinese, he sound way younger than your usual 60 y/o man as well
What is swaggy style?
Becoz he speaks some shanghai dialect.
His poor back. He looks older than 63.
Even my 90 years old grandpa looks better.
@@andrewzhang4054 poor guy needs a vacation + massage!
@1 2 or just from bending over making pancakes all day for years....
@1 2 he's shanghainese, no rice picking for him. most modern city in china since ww2
@@andrewzhang4054 Thought the same thing, my granddad is 87, and he looks younger and healthier.
I feel heartbroken that his son doesn't want to follow his footsteps (I know it's unfair to force someone to do something) and no apprentice seems to last in the long hours of work :( I just hope he still finds happiness and contentment in his work despite everything.
It wont be easy u know like its a tough and a very little rewarding job like when you are young working to make pancakes would not really cross their mind like of course his kid dont want to learn to make pancakes looking at his dad like that with almost no room for fun or break with little reward from the business like yeah its tough......
His son deserves his own life. He's free to do whatever he wants. Respecting your parents doesn't necessarily mean following in their footsteps.
Would you like to follow on his footsteps?
wtf is this comment lol
Maybe his son looked for a office professional job so his father need not to work for long period everyday.
The lady who narrated this script, everytime she pronounced every Chinese words is *on point* with its original accent.
👍 *great job!* 💐
I got to try his scallion pancakes if I go to Shanghai .
We need to crowdfund this man a back brace for his kyphosis.
I wish I could try these, handmade food exceeds all food that you could purchase in grocery stores.
This man is the true meaning of HARD WORK.
3:40 That lady is so sweet, not everyone thinks about the person behind and buys less.
When I was in elementary school, my grandpa picked me up from school every friday. We always went to the nearby food market for these. That was his favorite. However, you rarely find these cooked in the traditional way anymore in mid areas of Shanghai, due to the hygiene regulation.
Scallion pancakes are one of my favorite savory treats to make. Takes time and definitely patience. I hope somebody comes along to continue on with the hard work he put into making his business.
A man of character, commitment and passion. How desperately the world needs more people like this.
I've walked by a few times and it does smell great
wish there was a way to start a gofundme for him to get treatment for his back :/
Im willing to be his apprentice and continue his work of art. It’s beautiful in my eyes.
He should just charge 2 dollars a pancake and work half the day.
he should charge 3 dollars and work 1/3 the day
Some chef just like to watch the costumer's smile and delight when they eat the food that they made.
@@juliuscaesar1062 i see where your going with this, reminds me of 5 minute abs
I see what you trying to say. But 2 dollars is a lot of money is Chinese currency. Asking 2 dollars for something simple like scallion pancake is like asking 10 dollars for a slice of pizza(not even with pepperoni kind).
Then people will buy the 1$ pancake
I've had these before, worth the trip to Shanghai!
man this guys back from carrying the business on his shoulder for this long
I love videos like these. Keep it up, Goldthread!
Thank you for giving us some great content.
Thanks for making this video, it made me miss Shanghai quite a bit! I used to work near this street but never discovered his shop. What a loss!
soul food. UGH. miss this so much.
yes me too I miss it so much also.
I came across your comment here. I really want friendship with you
This is so beautiful- who ever decided to film how he leaves as a juxtaposition of how he works is just brilliant. Such a cool dude!
I totally believe this video title. These sorts of pancakes always taste WAY better than I think they will, when made well. Same goes for Korean yachajeon. So incredibly basic in concept yet during the frying, something mysterious and truly magical must happen. :) Yum.
Such a humble and honest man ..
I hope someone help him with his back. Grandpa works so hard from dawn to evening. He needs more helping hand so he can have some resting hours.
can someone go there and treat his hunchback? So that he keeps his business going even further.
Was thinking the same thing!
Maybe chiro guy Joseph Cipriano can have a vacation in China and chirostraight this guy using that famous y-strap multiple times for the ultimate pleasure and result. The chive pancake tradition should be protected at all cost!
What he needs is someone to continue his business. He needs help otherwise he wouldn't be doing it all himself.
His back bent from carrying the business
@@heeroyuy2253 idk, but that bad of a hunchback i assume would need at least surgery. A chiro might mess it up even further. But idk im just guessing im no expert
I love watching craftsmen like this gentleman.
i hope everyone can continue support this hardworking man!
He removes the greasy texture but not the oily flavour by baking them... That’s so smart. I do this with some foods but never baked goods!
my grandpa made this everyday back then and I've gotten sick of it for the past 5 years. But now I wish I could taste his cooking again
Ate this pancake before. it was really good!
I saw the line visiting Shanghai on holiday, and was like .... it’s too damn hot for standing, went to this other old guys bbq place waited 15 minutes for the best bbq in the world.
Respect to this man
Respect for this master!
Wow, I remember last time I went to Shanghai it was in the residential. Didn't know he opened a shop!!!!
Not sure I wait for that long but I do love those pancakes. Bit different from the thin ones we see here in the States.
My friend had me wait for a seat at one of her favorite vietnamese restaurant in La Mirada, Calif and it was well worth it. Next time we'll make a reservation...LOL
That was awesome.
i did make one and it smells amazing....
Wow! This is just pure dedication on both sides of these scallion pancakes. I feel bad about making the frozen ones for tonight's dinner now. ._.
wow, I make scallion pancakes for my family, but I don't use his technique. that is very labor intensive
It looks like Uncle Wu takes good lovingly care of his Scallion Pancakes.👍🏻👏🏻👍🏻
mad respect for the guy
Hope this man finds a worthy successor
4:52 look at all his groupies lmao
God bless you 😁
A true hero!
he deserves all the respect
This is just like that Chinese novel. A Valiant Life. Scallion pancakes for life!
Would love to apprentice tbh. Seems naive to say, but I really do think it is amazing what he does and others like him.
You would become famous too.
If he sell one piece for ¥1.5, one day 300 is ¥450, one month rest 4 days. He only earn ¥11,700 not included rent, cost and worker salary. So maybe at the end he just got ¥4K-5K? Not easy to survive with ¥4k-5K in Shanghai, one basic room cost rental of ¥4K in Shanghai. Such a honest and dedicated man, he just want to keep the tradition but not attracted into huge benefit. This is the spirit of many old Chinese in olden times. We younger, must learn from them. Salute.
He could raise the price to ¥2 or 3 and get more money.. people will still buy.. the lard and oven frying are extra labors with annual inflation.
They're over 1 dollar a piece, pretty sure it's more than 1.5RMB
One of the few times I would click for a mainlander video. This dude is BOSS!
Nice
Wow this is like the live version of valient life🤩
all these places to visit in Shanghai!! will Goldthread cover the Sihang Warehouse in upcoming movie 800 that takes place in Shanghai?!
It's so popular even during Coronavirus times. That really speaks for this remarkable business.
爸爸身体健康~年年有余💚💙💚💙
I saw him on a Rick Stein video about Shanghai. A long queue too get a scallion.
Ada 阿大 is the most famous scallion pancake stand in shanghai, just FYI. But this is NOT the authentic version I grew up with. It's deep fried in lard and too greasy. The more traditional version uses much less fat.
Best scallion pancakes in the world. 👍👍👍👍👍👍👍👍👍👍
Hey, Xwedê belaxwe gihandîyo! Ayy, çi qasî xweş dixuyin!
Such a good man needs help cause he clearly needs a rest. Hes so bent over.
Honestly, I have no idea if his back can be fixed. Or it will last for the rest of his life.
respect
That thing is the best with beer I tell you
Damn that looks good.
I'm willing to learn and bring it to the U.S.
Where are all the chiropractors who make videos for nothing i challenge their talent with this wonderful man.
A chiropracter won't fix this, he needs corrective surgery and physical therapy.
Parents work hard, They know how hard their work is, how little they can make, so in reality they want their children to do something else, to get a better education. very rare to see any parents wanting their children to inherit something that is hard.
I JUST SUBBED!
I really wish his son or daughter changes their mind in due time so they can help and inherit this mans business! Its heart breaking to hear how he wants to hand down his skills yet hasnt found anyone willing yet.. Reminds me so much of my dad who constantly wants me to inherit his and learn from him. Im just so damn fucking stubborn. I really hate myself sometimes.
Anyways, this is some awesome stuff and would love to try this one day!
Discipline is a trait that cannot just be taught.
Also perhaps the son feels he can make more money with less effort. After seeing what his dad goes through every day I don't blame him.
Unfortunately his passion as taken a toll on is health. He starts making the dough at 3 in the morning when he should be sleeping. Sleeping replenishes all body tissues, bones ect. He is 63 but looks way older and his spine has Unfortunately been affected from lack of proper sleep cycle., long hours on the feet ect. If he had help he could start making the dough in the evening and leave in overnight, as he gets up early anyhow. I will take the extra step and bake mine and see how they turn out.
"his spine has Unfortunately been affected from lack of proper sleep cycle., long hours on the feet ect. " wtf are you talking about. This has nothing to do with his back/Spine.
@@PkingForGangstas yeah for real the dude just has bad posture. Even now his back CAN be corrected. It would just be a more painful process and would take years to reverse muscle growth that happened from him hunching over.
What are you even saying
What are you talking about? He doesn’t even look 63. His back was caused by bad posture and a medical problem that wasn’t lack of sleep
Hongkong 👍👍yes
I got calculus exam in 10 mins but I'm hungry so I watch this to satisfy my hunger
Does anyone know where his shop is located?
Interesting use of an oven for the finish. I think that’s like a naan-style bread?
It’s more like a biscuit- bread thingy!! :D
工匠精神!
That's like part-time waiting in line
quote " its hard to n=make a name put yourself out there but craft is easy to destroy and changed"
Man I miss Shanghai
Whatever God this man believes in please bless this amazing man. Take away any pain he has and grant him pure happiness
I had his pancake and it was ok, but definitely not the best. I’ve seen more than a dozen of interviews of him and the guy is a genius in marketing.
Hope his back pain gets better.
It’s sad to see how bad his back is. My parents are older than him and worked in restaurants for 30+ years and look more youthful. His food looks great. It’s a bit surprising he only sells 300 of them a day - I think the time and limited space in that oven really limits the number he’s able to make a day. I hope he’s able to pass on the business to someone worthy and retire peacefully one day.
Man, his back is hunch, a lot of hard work for that 300 pancakes a day. $1 each is not going to be enough for his contribution.
i would wait a lifetime
love scallion pancake. tried making it myself always end up not too good. hard to get good lard
buy it online just as good
Reporter: do you eat scallion pancakes for breakfast?
Chef: rarely
Reporter: why?
Chef: I have had too much.
Me: I have to try it once day but 3 hours wait, I don't know.
Never had them. But people that had them, they all say they're very greasy. I like savory pancake.
They are great, crispy but also soft and chewy. You should try to get them next time you go to a China town or big Asian market
Ohhhhh noooo
*grabs my pack of frozen scallions pancakes and cries
I wish this would become a long lasting family business.
I think at a appropriate age of retirement, perhaps a restaurant can buy the recipe from him. 💕
爸爸您卖肉夹馍吗?
i would gladly apprentice with you sir.
Breakfast time, order your lunch now
What is a lard roux, how interesting...
It’s eaten on the go after waiting 3 hours in line🤔😅🤷♂️🫓
If u buy this for b/fast, u'll get it only during lunch hour 😆
This man work very hard too hard indeed, he should work smart not hard, he should raise the sales price and hire young people to do the hard work!
