- This is such a classic! Simple and delicious! The vodka sauce alone plays so many rolls in Italian cuisine but pairing it with penne is probably my favorite way to use it! Thanks for watching! Cheers everyone!

I had the random idea the other day that you can turn vodka sauce into Indian butter chicken sauce with a couple of tablespoons of garam masala and some butter (and cilantro if it works for you). Penne ala makhanii sounds like it could be a pretty good fusion dish...

I think you need the alcohol in the sauce to allow oil soluble flavors in the tomato to mix in with the sauce. If you burn off 90-95% of the vodka you put then it might be waste of the vodka

Kev, next time try sautéing some prosciutto with the onions and garlic, it goes a long way!
I do like adding a little Parmesan into the actual sauce as well. Never enough parmesan for me

Im a big advocate of not adding all the pasta and mixing it into the sauce... It ruins the pasta to me makes it way too soggy especially after it sits in the fridge... Just spoon out ur sauce on top of a bowl of noodles and keep the sauce seperate when storing in fridge. Anyone else?

Vodka takes a long time to evaporate out even if you brulee it. Most of it stays in the pan. That's the whole point of using it in tomato sauce, to extract more flavor from them. If it did completely burn off there would be no point using it in the first place.
Should have made it from scratch not "Add marinera." Do it with crushed tomato (blended) basil garlic prosciutto salt pepper vodka crushed red pepper heavy cream.
