the dairy council or whatever they are called lol. DO NOT WANT us mass canning dairy at all.. the end line to them is revenue right? by canning we arn't rushing out for the fresh dairy.. BECAUSE we have it on the shelf thank you lol lol.... thats why it's not a tested canning session.. but susan.. imagine needing cream cheese and opening your kitchen cupboard to grab one? it's awesome lol.. and you can do waterbathing at home with a pot tall enough.. and a facecloth in bottom for jars to sit on.. make up a few for family stocking stuffers.. watch there faces when they realize it'll keep on shelf a few years lol
I really appreciate your clear instructions and method. I haven't done this yet myself, but may end up doing a small amount. We are not big cream cheese eaters, but I do like the idea of having some on hand.

I had a couple jars of cheddar cheese for over 3 years, from the first jar to the last was the same. The cheese gets a bit stronger flavor. I always wipe just a little bit inside the jar. I jarred 1 pint of instant milk mixed to taste. I pressure cooked it for 7 minutes, but next time I’ll pressure cook 15 to get to evaporated consistency. I wanted it to see how long it would last, like you, if you need it, use it. I got 6 days before I needed it. It tasted good as far as warm milk goes.it made great biscuits. I never canned to drink, just to cook with.

My old Kerr canning book says cheese is safe to can because botulism can't grow in it. It's in the part explaining botulism. However, it just says cheese, not soft or hard. And it doesn't give a how to. It can be waterbathed according to Kerr. Also, some brands of cream cheese is definitely high acid because the lady who has the Texas homebakers bill site has sent in some cream cheese frosting to be tested. Cream cheese icing isn't considered safe in unrefrigerated circumstances so it can't be sold by home bakers. But, hers tested alright to sell. Just a little fyi.
I'd have never guessed that cheese could be canned. So many recipes and uses for cream cheese, so there is a big benefit to being able to can and always have some on hand. ❤

Would you recomend saving the creamcheese to flavor once opened or would you flavor it first? I am new to canning by just a year now and wondered WHY so many things were not included in how to can them. I love this video 😊
sorry for delay.. personally i find flavoring? enhances over time in jars.. sometimes to it's own favor .. depending on the herb used.. i'd wait.. open and add herbs and let them marry over night in fridge?..
I thought I would share with you and get your opinion about this as well. My neighbor works at a hotel and they're changing everything because of covid. And they're not cooking breakfast anymore so she has all this excess food and everything and she did not want the little packages of cream cheese that are 1 oz each go bad so she stuck it in the freezer and of course the top of the box said do not freeze and I tasted one and it's really weird how it happens it's a little off in texture and taste but I believe that when I put this in the pressure canner I believe it will go back to the right form I know the taste might not be just like it was but I do believe it will taste better than it does now. but I'm certainly not going to throw all these little 1 oz packs of Philadelphia cream cheese in the trash I am going to try to do this by going with your instructions. And I'm so glad that you used the half-pint jars because I have a bunch that are already sterilized and I just need to warm them up and I can finally do them up and do these cream cheese up in them. I hope and pray it tastes very good! Thank you Mrs. Paige! I did do the milk the same way you did. And I did have a question about that how long do you process the half-pint jars of milk and is the timing different or anything different when you turn it into chocolate milk in half pint jars? your pre-frozen cream cheese? will not return to before freezing condition .. like you said.. not tossing it out right. however i do not pressure can it either due to the ingredients in cheese it's considered a high acid food. ..as for milk? same cooking instructions for choc as for reg. . be sure to follow as per video please.✔👍

oh trust me guys... just go get like 2 pkgs.. get out a high pot if you don't want to run a giant water bath.. toss a hand towel into the bottom for your jars to rest on.. follow instructions in video for two wee 1/2 pints..and be sure your water is 2 inches above your jars.... when done? allow to cool.. put one jar in pantry with date and TESTER written on it. the other.. crack open ( nicely now lol ) and ENJOY... so much you'll enjoy? your tester will have company... because your going to rush out and do more lol ha ha ha.. seriously? it's so nice to have it on the shelf. You are getting really good at editing. I would have not thought it possible to water bath cheese, but it works and that is what counts. We freeze block cheese and the texture changes, but I like it crumbly and it tastes nice. Mostly (for us) cheese is for cooking so the texture doesn't matter. One of your middle ads was for bagels, lol... They made me crave bagel and lox. One of my favorite foods. Thanks for the chat... TTYL....

I know this is an old video but I canned some cream cheese today following this recipe and everything went well but I just took the rings off an noticed condensation on the inside of the jars at the top. Is that normal? Or should I toss them or just put them in the fridge an use them right away? I could really use some help..... many thanks My husband said he thinks it could be oil since it's not dripping , running or moving around when I move the jars around....
If those jar are sealed? It's all good. I know its scary but it's all good. If leary? Use those first. After you open your first jar and stir it in? You'll smell taste and devour lol
My rebel canning tip is to reuse one or two lids per each canning session to save on lids. If there is an issue, then the food gets eaten. I mark the re-used lids so I consume them first. This has helped stretch my lids, especially since they seem to be harder to find. I have had great success. I also reuse commercial jars that have lug lids and have had no failures. I love lug lids! I hope this helps others. Again, use only one or two per batch if you're worried about failure.
oreo? i do save my lids.. with my jar=key opener? i can now lift them off without ANY damage at all.. only my small mouthed jars.. the large? get damaged to much. thats ok.. i have a box of MINT used lids for hot water bathing. just in case..i've not tried the lug lids yet.. but im saving them as well. love your comment. @@pegsclips wow that drink actually sounds good. I think i would like to try how he makes it. I was raised by my grandmother on the old ways of water bath canning including open kettle. Italians still use the old open kettle method even with things they claim you should pressure can. I was taught to cover the open kettle over fire with Towels and the boil would go for hours with the tops of jars covered more than two inches but I was a kid and was only allowed to snap the beens hull the corn sqaush the tomatoes or hull the peas... I never was allowed to be around when they did the canning so my grandmother died before she could teach me when i was older. Im 52 and only started water bath canning two summers ago and then i wanted to do other things and couldnt because everything else was considered unsafe without pressure canning.. always been scared of pressure canners.. so i had to decide what to do and i found an all american 910 pressure canner brand new on ebay for 100bucks, and it sat in a bo lx for over a year. This covid forced me out of a job and I decided to finally get over my fear. My first pressure can project was onion stock. And i been hooked ever since. I have been making my home made split pea and bacon soup i dont like making it with ham because i never really liked the texture and bacon with potatos and carrots tastes so much better. So i been canning potato and i started canning bacon and chicken and all kinds of things and i am in heaven and love the food being in jars ready to eat. So yes i can say im a newbie rebel canner hahaha hah because there is no fda approved for bacon and im getting brave to want to can milk and make my own evaporated milk which ive learned from All Sorts who is a great youtuber.. she actually has several videos on doing the milk at different processing times and how it turns out after. Would love to see anything you want to can including rebel canning videos. Im especially interested on how to can celerey without it turning out mushy or floating in the jars after. I have experimented with the celerey by keeping it in whole sticks which seemed to help and really packin down the sliced pieces but im not happy with the mush. Do you have a better way of cannong celery in a pressure canner or is there any way to actually do it at a longer processing time say maybe on a full rolling boil for about an hour under water bath.. i keep throwog the idea around but i havent had the courage yet to try.

i ordered the jar lid opener from amazon a few years back.. id flip if anyone opened my jars without it lol.. and ya.. that cheese.. so easy eh? and well.. i keep mine in the pantry on a shelf..others keep it in the fridge and hope it doesn't expire 😊

Hi Peggy and Andy, I have a Huge Pot with a bottom holey plate we use for lobster & Crabs it also has a flat lid, could I use that to water bath and can you add dried chives in your cream cheese? This was a great segment and really want to try this, we love cream cheese and this would be so nice to have anytime and also with recipes. Great Job!
hi Wendy. any pot thats tall enough to go 2 inches over your jar? can be used. also? a dish cloth on bottom under jars.. basic needs. now.. putting the chives in? i seriously? would wait till you open a jar. chives are a low acid food. .. beside once you open a jar? toss in whatever and put into fridge.. so flavors marry a few hours and voila.. good as gold and not compromised. happy canning can't wait to see what you've done.

Please, share how you use these, or what type of recipes you have tried and truly been successful in. Cheese cakes? Casseroles? Deserts? etc... Thanks for showing us what you do with cheese. I never would have considered canning cheese.

a canning jar opener. i searched forever and finally found it a few years back on amazon.. bet you can still find it. i freak if my jars are opened with anything other then this.. zero lid stress.. means i can reuse them for dehydrating projects.

I water bath canned butter, and 2 canners told me I could get botulism, and that I should take the butter out of the jars, put in new jars and lids and pressure can 60 minutes. 😳🤯 I'll go see your video on how you do it..
so much conflicting information eh? first thing i do is check usda site..if it's not there? it's pretty easy to determine if it's a safe go for a rebel session by thinking about our set rules for do's and dont's .. i love rebel canning but WITHIN reason lol..and tester jars? oh i have them.. certain things i'll try to can and leave in pantry 3 jars..and test them thu the year.. but i do play towards the safe spectrum..i don't want to be the old lady that kills her family lol.

The majority on the side of safety rules! 🤔 I'm doing a test canning session right now. Washed beans, no soak. 75 min pressure canning pints. I'll see how it goes. I need some blackeyed peas! It's impossible to extract ALL bubbles sometimes. A few won't ruin your project... BUT I'd strive to remove all if your concerned about a jar? Be sure you mark it. And use that first. Hope that helps

Wanda..it's really not when you consider cheese rennet and other compounds of cheese are in fact a high acid food. pretty much the same ph also as tomatoes. water bath canning was part of this however no dry canning was used for extra sealing.. not sure where you saw that... i would never ever show a method we didn't know to be safe and tested by ourselves over the years. however that said? your kitchen your rules. love when people determine for themselves what they are comfortable with. the dairy council or whatever they are called lol. DO NOT WANT us mass canning dairy at all.. the end line to them is revenue right? by canning we arn't rushing out for the fresh dairy.. BECAUSE we have it on the shelf thank you lol lol.... thats why it's not a tested canning session.. but susan.. imagine needing cream cheese and opening your kitchen cupboard to grab one? it's awesome lol.. and you can do waterbathing at home with a pot tall enough.. and a facecloth in bottom for jars to sit on.. make up a few for family stocking stuffers.. watch there faces when they realize it'll keep on shelf a few years lol

I really appreciate your clear instructions and method. I haven't done this yet myself, but may end up doing a small amount. We are not big cream cheese eaters, but I do like the idea of having some on hand.

I had a couple jars of cheddar cheese for over 3 years, from the first jar to the last was the same. The cheese gets a bit stronger flavor. I always wipe just a little bit inside the jar. I jarred 1 pint of instant milk mixed to taste. I pressure cooked it for 7 minutes, but next time I’ll pressure cook 15 to get to evaporated consistency. I wanted it to see how long it would last, like you, if you need it, use it. I got 6 days before I needed it. It tasted good as far as warm milk goes.it made great biscuits. I never canned to drink, just to cook with.
i prefer our jar milk for baking/cooking... breads.. if needed to drink? slap a jar into fridge a few hours

My old Kerr canning book says cheese is safe to can because botulism can't grow in it.
It's in the part explaining botulism. However, it just says cheese, not soft or hard. And it doesn't give a how to. It can be waterbathed according to Kerr.
Also, some brands of cream cheese is definitely high acid because the lady who has the Texas homebakers bill site has sent in some cream cheese frosting to be tested. Cream cheese icing isn't considered safe in unrefrigerated circumstances so it can't be sold by home bakers. But, hers tested alright to sell.

I'd have never guessed that cheese could be canned. So many recipes and uses for cream cheese, so there is a big benefit to being able to can and always have some on hand. ❤

sorry for delay.. personally i find flavoring? enhances over time in jars.. sometimes to it's own favor .. depending on the herb used.. i'd wait.. open and add herbs and let them marry over night in fridge?..
I thought I would share with you and get your opinion about this as well. My neighbor works at a hotel and they're changing everything because of covid. And they're not cooking breakfast anymore so she has all this excess food and everything and she did not want the little packages of cream cheese that are 1 oz each go bad so she stuck it in the freezer and of course the top of the box said do not freeze and I tasted one and it's really weird how it happens it's a little off in texture and taste but I believe that when I put this in the pressure canner I believe it will go back to the right form I know the taste might not be just like it was but I do believe it will taste better than it does now. but I'm certainly not going to throw all these little 1 oz packs of Philadelphia cream cheese in the trash I am going to try to do this by going with your instructions. And I'm so glad that you used the half-pint jars because I have a bunch that are already sterilized and I just need to warm them up and I can finally do them up and do these cream cheese up in them. I hope and pray it tastes very good! Thank you Mrs. Paige! I did do the milk the same way you did. And I did have a question about that how long do you process the half-pint jars of milk and is the timing different or anything different when you turn it into chocolate milk in half pint jars? your pre-frozen cream cheese? will not return to before freezing condition .. like you said.. not tossing it out right. however i do not pressure can it either due to the ingredients in cheese it's considered a high acid food. ..as for milk? same cooking instructions for choc as for reg. . be sure to follow as per video please.✔👍

oh trust me guys... just go get like 2 pkgs.. get out a high pot if you don't want to run a giant water bath.. toss a hand towel into the bottom for your jars to rest on.. follow instructions in video for two wee 1/2 pints..and be sure your water is 2 inches above your jars.... when done? allow to cool.. put one jar in pantry with date and TESTER written on it. the other.. crack open ( nicely now lol ) and ENJOY... so much you'll enjoy? your tester will have company... because your going to rush out and do more lol ha ha ha.. seriously? it's so nice to have it on the shelf. You are getting really good at editing. I would have not thought it possible to water bath cheese, but it works and that is what counts. We freeze block cheese and the texture changes, but I like it crumbly and it tastes nice. Mostly (for us) cheese is for cooking so the texture doesn't matter. One of your middle ads was for bagels, lol... They made me crave bagel and lox. One of my favorite foods. Thanks for the chat... TTYL....

I know this is an old video but I canned some cream cheese today following this recipe and everything went well but I just took the rings off an noticed condensation on the inside of the jars at the top. Is that normal? Or should I toss them or just put them in the fridge an use them right away? I could really use some help..... many thanks My husband said he thinks it could be oil since it's not dripping , running or moving around when I move the jars around....
If those jar are sealed? It's all good. I know its scary but it's all good. If leary? Use those first. After you open your first jar and stir it in? You'll smell taste and devour lol

My rebel canning tip is to reuse one or two lids per each canning session to save on lids. If there is an issue, then the food gets eaten. I mark the re-used lids so I consume them first. This has helped stretch my lids, especially since they seem to be harder to find. I have had great success. I also reuse commercial jars that have lug lids and have had no failures. I love lug lids! I hope this helps others. Again, use only one or two per batch if you're worried about failure.
oreo? i do save my lids.. with my jar=key opener? i can now lift them off without ANY damage at all.. only my small mouthed jars.. the large? get damaged to much. thats ok.. i have a box of MINT used lids for hot water bathing. just in case..i've not tried the lug lids yet.. but im saving them as well. love your comment. @@pegsclips wow that drink actually sounds good. I think i would like to try how he makes it. I was raised by my grandmother on the old ways of water bath canning including open kettle. Italians still use the old open kettle method even with things they claim you should pressure can. I was taught to cover the open kettle over fire with Towels and the boil would go for hours with the tops of jars covered more than two inches but I was a kid and was only allowed to snap the beens hull the corn sqaush the tomatoes or hull the peas... I never was allowed to be around when they did the canning so my grandmother died before she could teach me when i was older. Im 52 and only started water bath canning two summers ago and then i wanted to do other things and couldnt because everything else was considered unsafe without pressure canning.. always been scared of pressure canners.. so i had to decide what to do and i found an all american 910 pressure canner brand new on ebay for 100bucks, and it sat in a bo lx for over a year. This covid forced me out of a job and I decided to finally get over my fear. My first pressure can project was onion stock. And i been hooked ever since. I have been making my home made split pea and bacon soup i dont like making it with ham because i never really liked the texture and bacon with potatos and carrots tastes so much better. So i been canning potato and i started canning bacon and chicken and all kinds of things and i am in heaven and love the food being in jars ready to eat. So yes i can say im a newbie rebel canner hahaha hah because there is no fda approved for bacon and im getting brave to want to can milk and make my own evaporated milk which ive learned from All Sorts who is a great youtuber.. she actually has several videos on doing the milk at different processing times and how it turns out after. Would love to see anything you want to can including rebel canning videos. Im especially interested on how to can celerey without it turning out mushy or floating in the jars after. I have experimented with the celerey by keeping it in whole sticks which seemed to help and really packin down the sliced pieces but im not happy with the mush. Do you have a better way of cannong celery in a pressure canner or is there any way to actually do it at a longer processing time say maybe on a full rolling boil for about an hour under water bath.. i keep throwog the idea around but i havent had the courage yet to try.

Hi Peggy and Andy, I have a Huge Pot with a bottom holey plate we use for lobster & Crabs it also has a flat lid, could I use that to water bath and can you add dried chives in your cream cheese? This was a great segment and really want to try this, we love cream cheese and this would be so nice to have anytime and also with recipes. Great Job!
hi Wendy. any pot thats tall enough to go 2 inches over your jar? can be used. also? a dish cloth on bottom under jars.. basic needs. now.. putting the chives in? i seriously? would wait till you open a jar. chives are a low acid food. .. beside once you open a jar? toss in whatever and put into fridge.. so flavors marry a few hours and voila.. good as gold and not compromised. happy canning can't wait to see what you've done.

hi carolyn .. i ordered it a few years ago from amazon. ( Jar opener). wasn't expensive and it really saves my lids from damage.. can reuse them for my dehydrating projects that way.

@@pegsclips Cowboy Candy is a hit with our family too. I've sold many a jars during canning season to friends. One year I sold 20 plus jars. I wish I had those jars back, minus the CC, lol. About the griddle... I don't want to use it either... pulled out the electric skillet for pancakes today. Like you, the mess scares me.... or better yet, messing it up scares me.

Gotta watch your butter video. I water bath canned butter, and 2 canners told me I could get botulism, and that I should take the butter out of the jars, put in new jars and lids and pressure can 60 minutes. 😳🤯

so much conflicting information eh? first thing i do is check usda site..if it's not there? it's pretty easy to determine if it's a safe go for a rebel session by thinking about our set rules for do's and dont's .. i love rebel canning but WITHIN reason lol..and tester jars? oh i have them.. certain things i'll try to can and leave in pantry 3 jars..and test them thu the year.. but i do play towards the safe spectrum..i don't want to be the old lady that kills her family lol.

It's impossible to extract ALL bubbles sometimes. A few won't ruin your project... BUT I'd strive to remove all if your concerned about a jar? Be sure you mark it. And use that first. Hope that helps

Wanda..it's really not when you consider cheese rennet and other compounds of cheese are in fact a high acid food. pretty much the same ph also as tomatoes. water bath canning was part of this however no dry canning was used for extra sealing.. not sure where you saw that... i would never ever show a method we didn't know to be safe and tested by ourselves over the years. however that said? your kitchen your rules. love when people determine for themselves what they are comfortable with.
