This is much better with a Jap/Kent pumpkin. Butternut is more sickly sweet, but Kent has a richer and sweeter flavour. Any of those fancy smaller pumpkins that have good thick flesh are great, too. Given the price of meat, it only makes sense to eat more meals without it.

Is your kid allergic to sunflower seeds, pumpkin seeds, or pepitas (a specific type of pumpkin seed, apparently -- the ones at our local bulk food section come already spiced)? Roasted seeds can bring a lot of flavor. A quick search suggests that some other subs might be beans/legumes (soybeans, chickpeas, regular peas -- though as peanuts are a legume, look into whether your child is also allergic to other legumes) and... pretzels? I found this quote: “I like to use pretzels in place of nuts in recipes, like pie crusts and chicken coatings. I’ve also crushed them on top of desserts and ice creams where chopped nuts would go.”
