Well, I don't understand that reference.
It's a song titled, "I shot the sheriff," I believe originally written by Eric Clapton. I've only heard the Clapton version. In it, he says, "I shot the Sheriff, but I did not shoot the Deputy." In that scene, Henriksen said "I shot the Sheriff..." so Dean says, "but you did not shoot the Deputy." to finish the line. Everyone knows, the more you have to explain a joke, the funnier it is.
Considering the fact that the song played over the video, the joke was kind of obvious
