  • Roasted coffee beans contain small quantities of a compound called acrylamide. In high amounts, acrylamide can be harmful. There are even concerns that it may also cause cancer. However, research suggests that drinking coffee in moderation is generally safe and may even have a range of health benefits

Please take note of the difference in tone between the title:
"Why coffee is killing you... slowly"
    and the description:
"research suggests that drinking coffee in moderation is generally safe and may even have a range of health benefits".
One is designed to get you to watch. The other is designed to be accurate.

My mom just turned 91. She has been drinking coffee all of her life. 1 cup in the morning, sometimes 2. Usually drinking it with a splash of Lactaid milk but no sugar. She started drinking coffee black as a young girl of 9. She has been thin all of her life and has never suffered from diabetes or heart related diseases. So whatever the level of acrylamide in her coffee, it hasn't affected her lifestyle or longevity. Nothing worse than getting sick from eating something you like because it was contaminated with E coli or Salmonella and not properly cooked to kill the pathogens. I can however say that I have avoided any daily medications for my entire life and am nearing middle age. I have not eaten any red meat since I turned 18, never smoked and have pretty much limited alcohol to only once in a blue moon events. I avoid any sugar in my beverages wholesale and try to make a point to eat one cup of broccoli, cauliflower or Brussel sprouts daily along with one cup of beans or lentils. Although I am not diabetic I have done extensive testing of my blood sugar levels throughout the day to see what are the triggering foods that delay my blood sugar from returning to the fasting baseline level. Keeping between 80 to 100 blood sugar for approximately 10 waking hours keeps my BMI and body fat lower than when I was exercising 2-3 hours a day.

Nice presentation. There's more to say about coffee. But first, indeed minimize exposure to acrylamides: quit smoking, air frying is better than deep frying and don't make coal out of your food.
Now some remarks fron Healthline (and yes, they do have a literature list)
Acrylamide in Coffee: Should You Be Concerned?
The health benefits of drinking coffee are pretty impressive.
It’s been shown to enhance brain function, increase metabolic rate, and improve exercise performance
A regular intake of coffee has also been linked to a lower risk of dementia, Alzheimer’s, Parkinson’s, and type 2 diabetes
To top it off, coffee drinkers seem to live longer
However, coffee also contains a potentially harmful chemical called acrylamide. This article reviews whether you should be concerned about acrylamide in coffee. How much acrylamide does coffee contain?
The amount of acrylamide in coffee varies greatly.
A 2013 study analyzed 42 samples of coffee, including 11 instant coffees and 3 coffee substitutes (grain coffee).
Researchers found instant coffee to have 100% more acrylamide than fresh roasted coffee, while coffee substitutes had 300% more.
Here are the average amounts of acrylamide they found in each type of coffee:
Fresh roasted coffee contained about 179 mcg per kg.
Instant coffee had 358 mcg per kg.
Coffee substitutes had 818 mcg per kg.
They also noted that acrylamide levels peak early in the heating process and then decline. So lighter-colored coffee beans have more acrylamide than darker ones that are roasted longer.
    SUMMARY
The amount of acrylamide in coffee can vary greatly. Well-roasted, dark, fresh coffee beans are likely to have the lowest amount.
    Is drinking coffee risky?
While a link between acrylamide intake and cancer in humans hasn’t been proven, it can’t be ruled out.
However, coffee drinking hasn’t been shown to increase your risk of cancer. In fact, it’s linked to a reduced risk of developing some types of cancers.
For example, in one study, people who increased their coffee intake by 2 cups (475 mL) per day had a 40% lower risk of liver cancer.
Coffee drinking is also linked to a plethora of other health benefits, such as living longer and a reduced risk of many diseases.
    SUMMARY
Coffee hasn’t been shown to increase your risk of cancer. In fact, it has been linked to a reduced risk of some types of cancers, such as liver cancer.
Given the potential health benefits of coffee, it’s not something you need to cut out.
    SUMMARY
Coffee contains many other chemicals that may be beneficial to your health. Cutting it out isn’t necessary..

Scary thing is the addiction is so strong they blame other things and cannot quit. On the other hand my grandmother who’s in her 90s loves coffee. For me I love coffee but the acid is too much for my stomach so I will only drink it if it’s high quality beans (fresh) organic and only once a week (no Starbucks no 711) it has to be top notch or else I won’t drink it. This might sound vain but I have never seen a coffee lover who looks younger than their age they usually look older. I do believe coffee ages your physical appearance because it does dehydrate your body.

As a coffee "addict", I instantly empathize with coffee drinkers, so I think I could say a thing or two on your post-scriptum:
Most fats, with the exception of trans fats are good or neutral (monounsaturated fats and poli-unsaturated fats are good, saturated fats are neutral). As for carbs: complex carbs, in moderation, are good, like the ones found in sweet potatoes, carrots, pumpkins, or nuts such as walnuts, macadamias (also a really good source of healthy fats), pistachios, almonds, Brazil nuts, etc. Unprocessed meat overall isn't bad, quite the contrary, as meat products usually are the highest nutrient-dense foods (just compare the nutrient profile of bovine liver and eggs to any vegetable). Fatty fish like salmon, sardines (better if not canned), and shellfish are also really healthy and nutrient-dense foods. And of course, vegetables like broccoli and tomatoes, cooked (increased absorption of indole-3-carbinol and licopene, both potent anticarcinogenic substances, when moderately heated), some turmeric (curcumin), and also some fruit (avocado, a little dark grapes for resveratrol and so on), also cheese (particularly the more yellowish fatty types) in moderation. Apple cider vinegar can be helpful specially for increasing stomach acidity for older people, thus improving their protein digestion. Also citric acid, e.g. lemons, can help in digesting fats by stimulating the gallbladder release of bile salts.
About coffee: although what Mike Hansen said is true, take it with a grain of salt, as there's mixed evidence of coffee with some studies suggesting it might contain benefits, in moderation (and not excessive like I do unfortunately). He's definitely right about acrylamide though, so I would just avoid temperatures above 90 degree Celsius, with 85 degrees being my personal sweet spot when I'm making my own coffee.
      I hope this helps somehow.

Darker roasts actually contain less acrylamide than lighter roasts because the acrylamide starts to degrade and/or evaporate with longer roast times.

I always knew coffee wasn't okay. I felt my energy drop and become sad when I saw my mom make it in the morning, and it made her breath stink and aged her. It is an addiction of mine that I indulge in once a day, which brings me negative feelings about myself because I never had issues with anything like this before, and have expectations of success for myself, and that includes aging well, helping and inspiring and uplifting others and being a good mate too whoever I end up with, if I do. I'm aware of the effect it has on my body, yet breaking this obsession seems very unlikely.

Honestly, every study and all research I've done has said the opposite of what this video says about coffee. Also, he mentions in the beginning that the temperature needs to exceed 120C, or 248F. Water boils at 100C or 212F. So, coffee is never up to the level he is talking about. Do stay away from fries fried in oil (or any fried food really), and fast food, and processed foods.

If your body can handle the caffeine and acid I don’t think it’s a problem, but I would only drink organic to avoid heavy metals and pesticides and try to stay hydrated with water because coffee dehydrates your body. If you do see signs of rapid aging, bad bread, loosing muscle, weaker bones I would quit right away. I know a person eventually got sick with cancer and he still couldn’t quit because he was addicted (as an non addict that was scary to watch) everybody who knew him saw the problem because he looked really healthy before he started drinking coffee. It can be deadly for some body types.

The European Food Safety Authority (EFSA) has established a tolerable daily intake (TDI) for acrylamide of 2.6 micrograms per kilogram of body weight per day. This means that for a person weighing 70 kilograms, the TDI would be 182 micrograms per day.
According to data from the United States Food and Drug Administration (FDA), the average acrylamide content of cocoa powder is around 20 micrograms per kilogram. Assuming an average cocoa powder density of 0.7 g/mL, 2 grams of cocoa powder would therefore contain approximately 0.014 micrograms of acrylamide.

I wonder if combining many types of acrylamide together, like drops in a bucket, are what lead to health issues. Many people drink coffee every day until they're 99, but never get cancer... maybe they didn't eat a lot of deep fried foods and processed foods during their life? But those who consume lots of junky foods AND coffee fill up their bucket quicker and die earlier from health complications. ?

A lethal amount of caffeine is about 180 mg/L, which has been determined by examining the blood of patients who died from overdose. When you consume ~100 mg of caffeine, it raises your blood caffeine levels by about 5 mg/L, meaning it'll take almost 40 cups of coffee to be lethal.

At the end of her shift, she had about a 45-minute drive to get home. So I understood she wanted to be alert, and coffee helped her do that. When she retired, we were all so happy for her. But only one year after retiring, she passed away from stomach cancer. I do believe that coffee played a big part in causing that health condition.

I love coffee. To stop drinking a cup or two in the morning is more than I'd PERSONALLY be willing to do.
But, this advice applies to many things - I: don't fry foods anymore (usually steam, boil, or bake), eat unroasted nuts, ditched toast (bread in general too), and go for light/medium roast coffee > dark roast.
With the net change in these other areas, I think that while cutting my coffee further would have some marginal benefits, it's a small thing I can afford to enjoy. And, it's not NEARLY as bad as other enjoyable things (sugar, smoking, alcohol etc.)
What good is a long life if you don't enjoy it somehow anyways. If I'm going to pick a vice, I'm glad it'll be coffee. ☕

In one of the largest observational studies to date, which analyzed data of 468,629 adults (average age 56) from the UK over 11 years, light-to-moderate coffee drinking (1/2 to 3 cups per day caffeinated or decaffeinated) was associated with 12% lower risk of all-cause death, 17% lower risk of cardiovascular death and 21% lower risk of stroke compared to drinking no coffee. However, these risks were only seen with use of ground coffee, not with instant coffee, which the researchers speculated could be due to differences in the chemicals they contain (Simon, Eur J Prev Cardiol 2022).
