Lizzy, as your mom is very new to Chinese food, order food that is not spicy or very mildly spicy, best is fried food, or deep fried food, like fried noodle with meat(since she does not like vegetables), fried or deep fried fish, fried chicken with dark sauce….only after she has good experience then you can slowly make her be more adventures, step by step. 😂 For her case, steamed food, or light food would not be her thing, I think.

Cantonese dim sum is perfect for those who are new to Chinese cuisines. Shanghai cuisine and similar ones would be next best choices. That's because those regions are abundant in a wide variety of foods.

一步一步来 (One Step at a time, Miss Lizzy) …
You can let Mother try new stuff but only if she wants to. At her age, maybe she's not too adventurous.😌
Being first timer, Mother's handling of the CHOPSTICKS was NOT BAD. You can see she didn't drop her food after picking them up with the Chopsticks.
Tofu (doufu) is bean curd. It is a plant-based food made from soy/soya beans. It comes in many forms and varieties. The fact that she had never heard it before means that people from the East and West are living in Parallel Universes. Every Tom, Dick and Harry, not only in China but in the East, would know and/or have eaten it at one time or another. Rich in proteins, it makes a good substitute for meats for the Vegans/Vegetarians.

Hi Liz, your mum is a very interesting “da ma”. I was so surprised that you give her the hotpot treatment only days after she arrived. It definitely has everything a westerner supposed to avoid before a “running in” period with the Chinese cuisine, like various internal organs, strong species, and as your mom said various leaves. But your mom is willing to take a dive and try it anyway. I saw almost unconditional love from her. Her reactions are priceless. Anyhow, we'd like to see China kindnap her as well. We’d like to see more vlogs of her travel in China.

The key to eating hotpot and getting your mom to like it more is in the sauce. Before making selections of ingredients to put in the broth, she should experiment with different combinations of sauce that appeals to her palate. Once she likes the sauce ingredient combinations, then the boiled ingredients (meat or vegetables) will soak up the sauce so everything tastes good.
The other important thing is to stop talking about intestines and brains and strange stuff to the foreign mind. Eating enjoyment is as much psychological as it is a physical experience. Once you plant unfamiliar images in a foreign mind, then everything else is an uphill battle.
