I think the chewiness could be tapioca starch or glutinous rice flour….maybe I’m wrong but it sort of makes sense. The machine they put it in to homogenize the batter confused me….not sure what that is!

I see lots of unnecessary operations in these videos. Why do you waste working time on breaking whole eggs instead of using bottled eggs? Why do you pour cheesecake dough from a bowl, then clean the molds instead of using a pastry bag? Such a waste of time and products! Looks highly unprofessional to me
