Potoler Khosha Bata-don't throw away your veggie peels | Bengali vegetarian recipe

  • In spite of being one of the most fertile regions in the world, from the 18th through 20th centuries Bengal saw devastating famines where millions perished. Many of these famines were manmade, meaning they were not caused by draughts or crop failures, but by the mismanagement and apathy of the colonial overlords at the time, the British. This has left a lasting impact on how Bengalis eat.
    Today's recipe, which uses just the peels of potol A.K.A pointed gourd, is one example of the frugal nature of Bengali eating. While the potol itself can be used in another recipe, the peels make for a fantastic appetiser. This same technique is applied to many other vegetable peels as well as to vegetables which are somewhat past their prime. What must have been born out of cruel compulsion has been turned into a celebration by our foremothers.
    Potol'er khosa bata, despite its dull look, is spicy and potent; just a small spoon of this stuff is mixed with a helping of boiled rice and relished. It is addictively good.

    In tamilnadu we use peels of certain veggies like ridge gourd, cho cho or the pumpkin guts to make a thogayal/ thuvaiyal. The concept of bata and thogayal are very similar. The peels are sauteed in oil with urad dal, hing, red chillis, salt and tamarind. And this is ground into a thick paste with coconut to make thogayal. The texure should be similar to the bata you have made. Eat with hot rice and sesame oil, a blissful homemade meal.

    This recipe reminds me of my 'Dida', whenever I visit her place, I tell her to prepare all those 'Batas' like, 'Potol er Khosha Bata, Lau er khosha Bata, ManKochu Bata, etc etc. all those dishes which belongs to East Bengal. It was a mouth watering recipe, and the plater combo you made is heaven for a 'Bangal' like me. ❤

    I often make this recipe...its very yummy...just 1 suggestion...rannar seshe jodi ektu mustard oil diye lid diye 2min resting time diten...taste aro bedhe jeto....aie recipe te raw mustard oil er taste khub bhalo lage..1 thala bhaat kheye newa jay😋

    The best part was "do not throw away the potols". The end product always look so delicious that they were confident that some Gen-Z might use the peels and throw the potol away.

    রসুনটা ঐভাবে খোসার সাথে না বেটে, কালোজিরে ফোড়ন দেওয়ার পর পেঁয়াজ কুচি ভেজে থেঁতো করা রসুন ভেজে, তারপর খোসা বাটা দিয়ে নেড়ে শুকনো করে একদিন করে দেখুন।

      It’s called soapstone. A friend gifted it to us. She bought it from some artisans in Karnataka.

      @@bubble575 umm take potol khosha and thinly chop it into smaller pieces then add salt , coriander powder , roasted cumin powder , little turmeric , red chilli powder mix it up and let it sit for sometime. The salt is going to draw out moisture from the peels . then add the coconut bata . Then add besan and rice flour .you wont need to add additional water in it . Then just fry it up .there you go

    Interesting recipe. The soap stone kadai that you placed on the gas, should ideally be put on flame with something in it like, water or oil. Else it tends to crack. ( Taught by my Grandma) ❤

    We used to eat stuff like this as kids (1970s and 1980s). Also using peels to start stock...
    Now unless you grow your own vegetables, I wouldn't dare.

    I love these batas. One can make knaach kola-r khosha bata using this exact process. The kick of the garlic and the nigella seeds and the pungency of the mustard oil take the flavour quotient to a different level altogether. However, I had a conversation with a nutritionist once and she asked me to soak vegetables like potol or shaak for at least two hours in cold water before preparing them because a large amount of surface pesticides is used on them. I try to follow this instruction while preparing batas. A little extra effort perhaps but anything is worth a bata. 😊

      Yes, Saptarshi's mother will soak the whole vegetable (potol, begun, korola, even bananas!) in water for this reason. We try to do it sometimes when we remember, but often forget.

      We already have a chaap recipe with beef. You can replace it with mutton. The tikia gravy is pretty similar. Also, we are not chefs, just home cooks.

    এই একই পদ্ধতি তে আমি কাঁচকলা আর ঝিংয়ের খোসা বাটাও করে থাকি। কিছুটা রসুন কুচিয়ে কালোজিরার সঙ্গে ফোড়ন এ যোগ করলে আরো ভালো লাগে।

    আমি করি আলু পটলের খোসা বাটা প্রায় একইভাবে তবে খোসা ভাপাই না! শুধু আলুর খোসা বাটা করলে তাতে পোস্ত দিই!
